During my college (Hotel mgmt) days.We (students))used to often go to Hotel Taj for waiting(To work as assistants,to gain experience )after college hours.At times we used to reach churchgate station at late night to catch the last train to come back home, if we had some time in hand before the train comes,we would rush to have Bhurji pav…sold outside churchgate station,this is way back in 1995 or 1996,but i can still remember the taste of that Bhurji.That would be the only stall open at that hour of night with just 2 guys catering to so many people. People used to gather in crowds to have bhurji pav………..and the bhurji was out of this world.I would someday love to go and check if this stall still exists…..
Ingredients:
2 Eggs
1 Onion chopped
1 Tomato chopped.
2-3 Green chillies chopped finely.
1/4 Cup chopped corriander leaves.
1/2 tsp turmeric powder.
1 tsp chilli powder.
1 tbsp oil.
Salt to taste.
Method:
Heat oil add chopped onion and tomato.
Cook till onion becomes pinkish in colour.
Add turmeric powder and chilli powder.Add broken eggs one by one.Add salt.Stir well to mix.
Add chopped corriander leaves.
Mix well,cover and cook for 3-4 minutes,till the eggs are cooked.
Serve hot,with pav or bread.
