Kobi Bhaji.

This is one of the easiest and fastest made Bhaji,goes well with chapati or even simple Dal rice.

Here I have added potatoes, you can make it without potatoes or also add other vegetables like green peas,capsicum or French beans.

My mom makes it with soaked Chana dal….but I like mine with potatoes.

Ingredients:

2 Cups Cabbage.(Finely chopped or thickly grated).

1 small Potato,washed,de skinned and sliced.

3 Chopped Green chillies.

1 tsp mustard seeds

1/2 tsp asafoetida(hing)

5-6 Curry leaves.

1 tsp haldi(turmeric powder).

1/2 tsp Sugar.

2 tbsp Grated Coconut.

1 tbsp Chopped Corriander.

1 tbsp Oil.

Salt to taste.

Method:

Clean,pat dry and chop kobi thinly.

Heat Oil in a pan.

Add musterd seeds,asafoetida,Curry leaves,turmeric and green chillies.

Add washed and chopped potato and kobi.

Add salt,sprinkle little water if required.

Cover and let it cook for a few minutes.

Add grated coconut ,chopped corrinder and sugar.

Mix well.

Serve hot with roti of your choice.

Tip:Dont cook this bhaji too much,semi cooked crisp kobi makes this bhaji  taste nice.
