My mom in law makes the best Pohe…As far as my memory goes,pohe is the only item made for breakfast at my in laws house on sundays…
When I was newly married,I couldn’t perfect the art of making this awesome dish…sometimes they used to turn soggy or at times very dry…so whenever we visited my In laws place,she used to make it for me.
With practice I perfected it.
Ingredients:
1 cup Jada Poha(thick pressed rice)
2 Onions chopped.
1 tsp Mustard seeds.
1 tsp Jeera .
1/2 tsp Asafoetida.
6 Curry leaves.
3 Chillies.
1 tsp Haldi(turmeric) powder.
1 tsp Sugar.
Salt to taste.
2 tbsp Grated coconut.
1 tbsp chopped Corriander leaves.
Juice of half lime.
Method:
Heat oil in a kadhai.Add mustard seeds,jeera,asafoetida,curry leaves and chopped chillies.Saute for a minute.
Add onions and haldi powder,saute well.
Add washed and drained poha(thick pressed rice) and salt and sugar.Mix well.Cover and cook for 5 minutes.
Switch off the gas and add lemon juice,mix well.Serve hot garnished with grated coconut and chopped corriander leaves.
Tip-This is a basic receipe of Pohe,various things can be added to this dish to make different versions.Diced potatoes are commonly added to pohe,other things like soaked moong dal(with skin),green peas,sprouted moong,grated carrots can be added to turn this dish into a complete meal.
Few days back on one of the cookery show on TV ,I saw a receipe of protein rich pohe,In the above receipe roasted groundnuts,sprouted moongs and cubes of tofu(refer glossary) were added.
