Crispy Bhendi (Okra)

This is my mom’s recipe,she makes it for Shonty,as he is a big fan of Bhendi.

Ingredients:

200 gms Bhendi (Okra),washed,wiped dry.

1 tbsp Dhana-jeera powder.(Corriander seeds and cumin seeds powder)

1 tsp Red chilli powder.

1/2 tsp Chat masala.

1/4 tsp Haldi powder ( turmeric powder)

2 tbsp Besan.

Salt to taste.

4 tbsp Oil.

Method:

Cut the stalk of each okra and make lengthwise slit.

Mix all the remaining ingredients except besan and oil.

Stuff this mixture in the slit of  bhendis,sprinkle remaining mixture on the bhendis.

Now sprinkle besan on it and mix well.

Heat a griddle,add 2 tbsp oil.

When the oil heatens up,arrange bhendis on the griddle.

Cook till bhendis turn crisp,flip over and cook on other side.

Remove on tissue paper.

Serve hot as a side dish or starter.

Dal Fry

Have you ever wondered, why your homemade Dal Fry doesn’t taste like the one you get in road side dhaba ,thats because – you don’t have this Recipe!

Jeera rice and Dal fry,is a made in heaven combination…you cant ask for anything more..

So here goes the recipe..

Ingredients:

1 cup Mixed dal ( Washed & soaked for an hour and pressure cooked for 3 whistles)

1 packet Maggi bhuna masala (with ginger-garlic)

1 tsp Ghee.

1 tsp Jeera.

3 Green chillies finely chopped.

1/2 tsp Haldi (turmeric) powder.

1 tsp Red Chilli powder.

1 tsp Dhana Jeera powder.

1 tsp Kasuri Methi.

1 tsp Garam masala powder.

1 tbsp Butter.

2 tbsp chopped Corriander leaves.

For the Tempering:(Optional)

1 tsp Oil/Ghee.

1 tsp Jeera.

1/2 tsp Dhana.

1/4 tsp Hing (Asafoetida.)

2 Red chillies.

8 Curry leaves.

8 flakes of Garlic (crushed).)

1/4 tsp Red Chilli powder.

Method:

Heat ghee in a kadhai,add jeera,let it splutter then add green chillies.

Add entire packet of  Maggi bhuna masala (with ginger-garlic).

Add chilli powder, haldi powder and dhana jeera powder,mix well and let it cook till oil separates. Add kasuri methi.

Add cooked dal and salt.Mix well.Add butter.

Let one boil come,add garam masala powder and chopped corriander leaves.

Add little water if required, this dal is thick in consistency.

For tempering,heat ghee and all all the items one by one.pour on the dal and keep covered.

Serve hot with Jeera rice,steam rice or paratha of your choice.

Tip:I have used mix dal for this recipe,I buy a packet of mixed dal which has all types of dal in it,if you don’t have it,you can mix together 2 tbsp of each type of dal that you have at home,moong dal,chana dal,toovar dal,urad dal,masoor dal,etc.

If you don’t have maggi bhuna masala,chopped onion+tomatoes +ginger+garlic can be used instead.

Jeera Rice

Ingredients:

1 cup Basmati rice (washed,soaked for half an hour and drained)

2 cups Boiling water.

1 tbsp Ghee.

1 tsp Jeera.

2 Green chillies finely chopped.

2 tbsp Corriander chopped.

Salt to taste.

Method:

Heat ghee in a thick bottom pan,add jeera and chopped chillies.

Stir for a minute.Add Rice,salt and boiling water.

Mix well, cover and cook,when half the water is soaked in the rice add chopped corrinander leaves.

Cook till water is completely soaked and rice is cooked.

Serve hot with Dal fry or any gravy of your choice.

Idli Fry

Its an easy to make yummy and healthy snack.Kids love it.

Ingredients:

4 steamed idlis (See rice idli recipe in snacks categorie) .

1 tbsp oil.

1/4 tsp Red  chilli powder.

1/4 tsp Black pepper powder.

Salt to taste.

Method:

Cut idlis into long pieces,make 5 pieces out of one idli.

Heat a non stick frying pan,add oil.

Place idlis on it,sprinkle chilli powder,black pepper powder and salt.

Roast till crisp on one side,flip over and cook till crisp on other side.

Serve hot with tomato ketchup.

Pea Pulao

Ingredients:

1 cup Basmati rice

1/2 cup Green peas.

1 large onion sliced.

1 tsp Jeera.

1 tsp Ghee.

2 cups Boiling water.

Salt to taste.

Method:

Wash and soak rice for half an hour in 2 to 3 cups of water.Drain and keep aside.

Heat ghee in a thick bottom pan,add jeera and sliced onions.

Once the onions turn pinkish in colour,add rice,green peas and salt.

IMG_20200717_132317Cover and cook till water evaporates completely.Stir once or twice in between with light hand,ensuring rice grain is not broken.

Tip:Dry fruits like cashewnuts,almonds and raisins can also be addeded to this rice to make it rich.

French Toast with Honey Butter.

French toast is a dish made of sliced bread soaked in eggs and typically milk, then fried flavoured with cinnamon….

Kids will love it for breakfast.

Ingredients:

4 slices of Bread(white/brown/multi grain)

2 Eggs.

2 tbsp Milk.

1/2 tsp Cinnamon powder.

2 tbsp Butter.

For Honey Butter:

1 tbsp Honey.

1 tbsp Butter.

A pinch of Cinnamon powder.

Method:

In a bowl beat together eggs,milk and cinnamon powder.

Heat a frying pan,smear with butter.

Take a slice of bread and dip it from both the sides in egg and milk mixture.

Let the excess mixture drip down,now place this slice in frying pan and roast from both the sides.

In a bowl mix together honey, butter and cinnamon powder well.

Once the bread is roasted from both the sides remove in a plate,spread some honey butter,cut into triangles and serve hot.

Tips:Instead of Honey butter ,powdered sugar can also be sprinkled on top before serving.

Cheesy Garlic Bread

This is an easy to make dish,goes well with any kind of pastas and soups.

it is also served as appetizer or starters before having a pizza.

Ingredients:

1 loaf French bread (Any long bread which is  locally available).

2 tbsp Herb & Garlic Butter.

1/2 cup grated Cheese.

1 tsp Oregano.

1 tsp Chilli flakes.

Method:

Preheat oven at 200°C.

Cut the french loaf in slices.

Bake for 8 minutes.

Remove in a serving plate and serve hot with Pasta or Soup.

Penne in Cheese Sauce

Pasta is one of Shonty’s favourite dish.He can have it any time and in any sauce.

So here I have made a very simple pasta in cheese sauce……

Ingredients:

1 Cup pasta.(Any variety of pasta,here I have used Penne.)

2 tbsp Cooked corns.

salt to taste

Pepper powder to taste.

1 tsp Oregano.

For the Cheese Sauce.

1 tbsp Butter.

1 tbsp Maida (Flour)

1 cup Milk.

2 slices of Cheese.

Method:

Add pasta and little salt to 4 cups of boiling water.

Cook pasta for 5 mins.Drain in a seive and pass through running cold water.

Keep aside.

In a non stick pan melt butter on a very slow flame.Add maida and roast well till maida is cooked,approximately 3 to 4 mins.

Stiring well add milk little at a time,making sure no lumps are formed.Once the milk comes to boil add pieces of sliced cheese.

Keep stiring,add salt,pepper powder and Oregano.Your cheese sauce is ready.

Add cooked corns and Pasta to the sauce

Mix with light hands,till all the pasta is nicely coated with the sauce.

Serce hot with Garlic bread.

Tip:Other vegetables like lettuce,capsicum,carrots or boiled shredded chicken can also be added to this dish.

Mix Dal Dosa

Ingredients:

1 cup Rice.

50 gms  Moong dal.

50 gms Udad dal.

50 gms Chana dal.

1/2 cup Dahi (curds)

2 tsp Green chili,Ginger & Garlic paste.

1/2 cup chopped Corriander leaves

Salt to taste.

2 tbsp Oil.

Method:

Wash and soak all the dals and rice together for 4 hours.

Grind to a smooth paste.Add dahi and green chilli,ginger and garlic paste.

Mix well.Add salt and chopped corriander leaves.

Heat a nonstick griddle.Smear it with little oil.

Stir and pour the batter spreading on the griddle in a circular motion.(from center of the griddle ).

Cook on medium flame,flip over to cook on other side.

Repeat the process to make some more dosas.

Serve hot with chutney of your choice.

Urad Dal & Coconut Chutney

Ingredients:

1 Cup freshly grated Coconut.

2 tbsp roasted Urad dal.

4  flakes Garlic.

Few sprigs corriander leaves

1 Green chilli.

Salt to taste.

For Tempering.

1 tsp Oil.

1/2 tsp Rai ( Mustard seeds).

6 Curry leaves.

5 flakes Garlic

pinch of Hing ( Asafoetida.)

Method:

Grind all the above ingredients  to a smooth paste using water.Heat Oil,add rai,hing and curry leaves and garlic.

Add to the chutney mixture.Mix well.

 Tip:This chutney goes well with idli,doasa or oothapam.
