Shevai Sheera.

Ingredients:

1 cup thin Shevai.

1 cup boiling hot water.

1/2 cup Sugar.

1 tbsp Ghee.

pinch of Salt.

1/4 tsp Jaiphal (nutmeg) powder.

Chopped mixed Dry Fruits (Almonds,Cashewnuts,Pistachio)Optional

Method:

Heat ghee in a non stick pan.

Roast shevai till it turns light brown,add salt and mix well.

Add chopped nuts.(Optional)

Add boiling hot water,cover and cook till water dries up completely.

Add sugar,mix well,cover and cook till sugar melts up and mixes well with shevai.

Switch off the gas and add nutmeg powder.Mix well.

Serve hot.

Grilled Tomato & Carrot soup

This is very easy to make quick soup made in microwave.

Ingredients:

4 Tomatoes sliced.

2 Carrots sliced.

6 cloves of Garlic.

Salt to taste.

1 tbsp Olive oil.

1/4 tsp Pepper powder.

1/2 tsp Sugar.

Method:

In a non stick oven safe tray.

Arrange tomatoes,carrots and  garlic,add olive oil.

Bake for 20 minutes at 240 degree C in oven.

Remove and let cool.

Blend in a mixie to form puree,add water if required.

Add salt and pepper powder.Heat in a microwave just before serving.

Serve hot.

Methi Makai Pulav

Ingredients:

1 Cup Long Grain (Basmati) Rice (Washed and soaked in water for half an hour)

1/2 cup Corn (steamed)

1 cup Methi (fenugreek) leaves chopped

1 Onion sliced.

2 tsp Ginger-garlic paste.
2-3 green chilies chopped
1/4th tsp. turmeric powder
1 tsp Dhana jeera powder.
1/4 tsp Shshi Jeera.
4 Green Cardamom.
2 sticks Cinnamon.
4 Cloves.
6 Black peppercorns.
1Bay leaf.
1 tsp Sugar.
Salt to taste.
2 cups boiling hot Water.
Method:
Clean and wash methi properly,drain the water and finely chop it.

Heat oil and ghee in a pan,add shahi jeera and whole garam masala.

Add onions,green chillies & ginger-garlic paste.Saute well.

Add chopped methi leaves,corn,turmeric and dhana jeera powder.

Cover and cook till methi is cooked.Add rice and salt,saute well.

Add  hot water and cook covered on low flame till done.

Serve hot with chilled raita.

Gul-Chun Ghalun Ghavane(Rice pancake with coconut and jaggery filling)

It is said that Ganpati Bappa likes sweets made from Rice floor,jaggery and coconut,hence modaks are his favourite,but when you dont have much time to spare this dish is made as offering to Bappa,made from same ingredients as modaks but less time consuming.

Ingredients: 

2 cups Raw rice.(any variant)

1/2 cup rice flour.(Optional)

1 tsp Salt.

Oil.

For Filling:

1 cup grated Coconut.

3/4 cup chopped Jaggery.

1 tsp Ghee.

1 tsp Cardamom powder.

1 tbsp pieces of Cashewnut.

1 tsp Khus Khus (Poppy seeds)

pinch of Salt.

Method: 

Wash and soak rice in 4 to 5 cups of water for 8 hours.

Heat a pan,add ghee,coconut and jaggery,cook till jaggery melts and mixes well with coconut,add cahewnut pieces and khus khus.Cook stirring in between till water completely evaporates and mixture becomes dry.Switch off the gas and add cardamom powder,mix well.Remove in a bowl and keep for cooling.

Grind the saoked rice into fine paste.Add rice flour,salt and water to adjust the consistency.Consistency should be like that of buttermilk.As per my mother in law, adding of rice flour helps in making crisp ghavans,but my mom makes it just with rice paste.

Usually a special griddle called Bhide is used to make these,but same can be made in non stick pan also.

Cut one onion into half and pierce a fork in it.Use this to grease the griddle with oil.Alternately a tissue paper dipped in oil can also be used.

Heat the griddle on high heat,stir and pour the batter spreading on the griddle.

Lower the heat and let it cook,now spread a spoon ful of Chun(coconut and jaggery mixture)on it till it leaves side and becomes crispy(No need to turn and cook on other side).Fold in half.

Again fold in half.

Remove on banana leaf or cotton cloth.

Repeat the process to make another ghavan.

If made in advance can be reheated in microwave just before serving.

Tip:Any variety of rice can be used to make ghavans,I make it with basmati,basmati tukda or brown rice.My mom uses ukde(boiled) rice.

Vanilla Ice cream with Double Mango & Cream

Ingredients:

4 scoop Vanilla Icecream

1 cup whipped Cream.

1 tbsp Sugar.

1/2 cup chopped Mango pieces.

2 tbsp Mango pulp.

2 broad glasses.

Ingredients:

Whip fresh cream and sugar together till smooth.

Mix in mango pieces in this whipped cream.

Take two broad glasses,fill half the glass with cream and mango mixture.

Add two scoops of vanilla ice cream in each glass.

Top up with mango pulp.

Serve chilled.

Instant Mix Flour Dosa.

Ingredients:

1 cup Rice flour.

1/2 cup Wheat flour.

1/2 cup Besan.

1 cup grated Carrot.

1 tsp Chilli powder.

1 tsp Dhana jeera powder.

1/2 tsp Turmeric powder.

2 pich Asafoetida.

1 tbsp hot Oil.

Salt to taste.

pinch of Fruit salt(eno).

Oil for greasing.

Method:

Mix all the flours and spices together.

Add grated carrot and salt,make a batter using sufficient amount of water.

Consistency of batter should be like dosa batter.

Add eno fruit salt and mix well.

Add Hot oil and mix well.

Make dosas out of this batter(thick dosas like oothapam).

Serve hot with chutney or sauce of your choice.

Tip:Chopped onoins,corriander leaves,cabbage can also be added to this dosa.

Batata Bhaji

Ingredients:

4 Potatoes(medium sized) boiled,peeled and cubed.

1 Onion chopped.

1 Tomato chopped.

2 Green chillies chopped.

1 tsp Mustard seeds.

1 tsp Jeera.

1/4 tsp Asafoetida.

1/2 tsp Turmeric powder.

2 tbsp chopped Corriander leaves.

Salt to taste.

1 tbsp Oil.

Method:

Heat oil in a pan,add mustard seeds,jeera and asafoetida.

Add green chillies,onion and tomatoes,saute well.

Add turmeric powder and half cup water.

Mix well,add cubed potatoes and salt.

Mix well and cook for 2 minutes.

Add chopped corriander leaves.

Remove in a serving bowl and serve hot with Chappati or Puri.
