This dish gives our regular roti a healthy green twist.
Ingredients:
To be mixed in a stuffing.
1 cup Coriander finely chopped.
2 tsp Dhania-jeera (corriander cummin) powder.
1/4 tsp Haldi (turmeric) powder.
1 tbsp Besan.(Gram flour)
1 tsp Green chillies finely chopped.
Salt to taste.
For the Dough.
1 1/2 cup Wheat flour.
1 tsp Oil
Salt to taste.
Ghee for brushing.
Method:
Combine flour and salt in a bowl and knead into a semi soft dough adding enough water.Cover and keep aside for 10 minutes.
Divide the dough into 6 portions and roll out each portion into a thick circle of 100 mm diameter.Keep aside.
Mix all the ingredients of the stuffing together.
Divide the stuffing into 6 equal portions and keep aside.
On a surface place the rolled dough circle and brush it evenly using ghee,
Spread a portion of the stuffing evenly on the disc.
Fold all the sides one over another to form a square.
Roll out again in a thick roti,using a little flour.
Cook on a hot tava using 1/2 tsp of oil till pink spots appear on both the sides.
Repeat with remaining ingredients.
Serve hot with pickle of sauce of your choice.
