Festival celebrations come alive when these delicious ladoos are made at home.It is a traditional Maharadtrian sweet suitable for all occasions and festivals.
Mostly made as naivedya for Lord Ganpati during Ganesh Chaturthi.
These Ladoos are highly perishable as fresh coconut is used,so usually made in small batches…
Ingredients:
2 cups Rava (Roasted in 2 tbsp ghee).
1 cup freshly Grated Coconut.
1 tsp Cardamom powder.
Cashew nuts and Raisins for garnishing.
2 tbsp Ghee.
For Sugar syrup
2 & 1/2 cup Sugar.
1/2 cup Water.
Method:
Heat Ghee in a kadhai.Add rava and roast till it changes colour( turns into light brown),stiring continuously.
Rava can be roasted in advance and stored in refrigerator.
Add grated cocnut and roast for another 5 minutes.
In the meanwhile mix sugar and water together to make 2 string syrup.
Now add roasted rava and coconut mixture and cardamom powder to prepared sugar syrup,mix well.
Remove from heat and leave it to cool,the mixture will take 5 to 6 hours to dry completely.
Once dried make ladoos out of it,garnish with nuts and raisins.
