Shirwale is again a very authentic dish from Konkan region.It is basically rice noodles soaked in jaggery Flavored coconut milk.The noodles can be made at home or else they are easily available in market.If you buy a readymade packet of rice noodles,just boil them in hot water for 5 minutes,strain and add to prepared coconut milk.
We usually make rice noodles at home using fine rice flour.Here goes the recipe….
Ingredients:
For rice noodles.
2 cups Rice flour.
2 and 1/2 cup Water(Boiling hot)
Salt to taste
1 tbsp Oil
For Ras.
2 cups grated Coconut.
1/2 cup grated Jaggery.
1/4 tsp Cardamom powder.
1/2 tsp Jeera.
Salt to taste.
Method:
For Rice Noodles.
In a big vessel bring 2 and 1/2 cups water to boil.
To this,add a pinch of salt and 1 tbsp oil.
To the boiling water add the rice flour, stir quickly, turn the flame off and remove vessel from the flame and put the lid on.
While the mixture is still hot, mix it well, and make cylinder shaped big rolls.
Take a big stock pot filled with water and bring it to a boil.
When it starts boiling put these cylinders in it.
Normally these will sink. after a while they will re-surface.When they come back to surface,thats the sign that they are ready.
Sev press
Take the re surfaced cylinders,while still hot and put them in the noodle ‘press’ or sev press and press out thin noodles on a sieve.
Please ensure the sieve is greased with oil or else these noodles will stick to the sieve.
Remove on banana leaf.
Make rice noodles with all the remaining cylinders.Keep aside.
For Ras.
Here I have used freshly grated coconut,you can use frozen also.
Grind together grated coconut and jeera water to form a smooth paste.Pass it through a stainer or mulmul cloth pressing firmly to extract all the juices.
To this juice add salt,jaggery and cardamom powder.Stir well till jaggery is completely dissolved.
Soak hot freshly made noodles in prepared ras,sprinkle few sliced dry fruits for garnishing and serve.
