This is a famous and authentic malvani recipe.There are various versions of this recipe.The one that I have posted here is that of my granny,Mrs Usha Paradkar passed down to me by my mom.
Ingredients:
For the Flour:
1 kd Rice.
1 kg Jwari(Jowar)
1/2 kg Chana dal.
1/2 kg Urad Dal.
1/2 kg Wheat.
25 gms Methi dana.
25 gms Corriander seeds.
10 gms Badishep (Fennel)
10 gm Cummin seeds (Jeera).
For the vada
2 cups vada flour.
salt to taste.
1 cup lukewarm water.
Oil for frying.
Method:
Mix all the flour ingredients and grind it.
Store it in a clean airtight jar and use as required.
While making vada,take 2 portions of the flour,add salt and 1 portion of lukewarm water.
Knead into a hard dough,cover with wet cloth and keep aside for 2 hours.
On a wet cloth take a small lemon sized ball of the dough and pat with fingers dipped in water to form a vada(same like puri).
Deep fry in Oil till done.
Serve hot.Goes well with Malvani chicken & Kala vatana Sambar.
