Kulith (Horesgram) Pithi

Kulith pithi is a comfort food for most of the Malvani  people.English name for kulith is horse gram. In Kokan region kulith is more popular.kulith

Powdered kulith is used to make pithla and whole kulith is used to make usal. Kulith powder is easily available in market especially in malvani stores.

For us Malvanis pithi bhat and fried fish is the ultimate comfort food.

Ingredients:

1 cup Pithi powder.

3 cups water.

1 small onion finely chopped.

3 green chillies chopped.

5 to 6 Curry leaves.

1/4 tsp Asafoetida.

1/2 tsp red Chilli powder.

1/2 tsp Turmeric powder.

1 tbsp grated Coconut.

1 tbsp chopped Corriander leaves.

1 tbsp Oil.

Salt to taste.

Method:

In a bowl mix kulith powder,turmeric,salt,chilli powder and water.Keep aside.

Heat oil in a pan,add asafoetida,curry leaves,chilli and onions.Stir and cook till onions become pinkish in colour.

Add kulith mixture,cook on slow flame stirring in between,once the pithi starts thickening add coocnut and corriander leaves.

Serve hot with rice.

TIP:Serve immediately,as it thickens once cold.

Green Peas Oothapa

1 cup Green peas.

1/2 cup Rice Flour.

1/2 cup Besan.

2 tsp Ginger-Garlic-Green chilli paste.

1/2 tsp Turmeric powder.

Salt to taste.

2 pinch Fruit salt(Eno)

Oil for smearing.

Method:

Crush grren peas in mixie to make paste.

Remove in a big bowl,add besan,rice flour,turmeric,salt and chilli  ginger garlic paste.

Mix well using whisk to avoid forming lumps.Add little water if required,consistency should be like dosa batter.

Add eno fruit salt and mix well.Make dosas out of this batter(thick dosas like oothapam).20130224_195918

Serve hot with chutney or sauce of your choice.

Tip:Grated paneer,carrot,thinly chooped onions/tomatoes can also be used as toppings on these oothapams..

Schezwan Cheese Pizza

20130220_235143Shonty is a big time cheese lover,so I keep on doing experiments to satisfy his cheese hunger….this recipe is one out of those.

Ingredients:

1 Whole wheat pizza base.

2 tbsp Tomato Ketchup.

2 tsp Chings Schezwan chutney.

1/4 tsp Oregano.

1 tsp Butter.

2 Slices of Cheese.

Basil for garnish.

Method:

In a microwave safe dish,place the pizza base.20130220_233814

Apply butter on the base.

In a bowl mix together tomato ketchup and  Chings Schezwan chutney.20130220_234052

 

Spread it evenly on the Pizza base.

Sprinkle oregano all over.

Break cheese slices into pieces and arrange on pizza base.

Heat it in Microwave on high speed for 2 mins or till the cheese melts.

After Cooling,Cut into pieces,garnish with basil leaves and serve.

TIP:Ching’s Schezwan chutney whichis newly come in market is a must buy,goes well with almost everything.

Thali peeth

Sqush Thalipeeth (3)

Thalipeeth is a type of savoury multi-grain pancake popular in Western India. It is a specialMaharashtrian dish. The dough is prepared from a special flour made from roasted Chana daal, Urad daal, coriander seeds, cumin seeds, wheat, and rice. Onion, fresh coriander and other vegetables and spices are added when kneading the dough.

Ingredients for Thalipeeth Bhajni:

1 kg Rice

100 gms Jowari

100 gms Wheat.

100 gms Chanadal.

100 gms Moong Dal.

100 gms Urad Dal.

1 small cup Jeera.

1 small cup Corriander seeds.

1/2 small cup Fenugreek seeds.

Method:

Roast all above items on slow flame for 15 minutes.Let it cool down completly.thalee peeth bhajani

Now grind it to fine powder

Store in airtight conmtainer and use as required.Can be stored for more than year in refrigerator.

Readymade flour is also easily available in market.

To make thalipeeth:

1 cup Thalipeeth Bhajni.

1/2 cup chopped Onions.

1/4 cup chopped Corriander leaves.

1 tsp Chilli powder.

1/4 tsp Haldi powder.

Salt to taste.

Oil for shallow frying.

Plastic sheet or banana leaf.

Luke warm water.

Method:

In a bowl mix all the above ingredients except oil.

Knead to form a semi soft dough using luke warm water as required.

Take a clean plastic sheet and grease it with little oil.Take a lemon size ball of dough and pat with fingers to form a pan cake.grease finger tips with oil if required.

Now make 3 to 4 small incersions on the pan cake.

Heat a griddle and transfere the pan cake on it,ensuring that plastic doesn’t touch the griddle.Smear oil in the incersions and on side.

Cook on both the sides till crisp.

Remove and Serve hot with tomato ketchup or chutney of your choice.

Tip:Other vegetables like grated carrots,cabbage or finely chopped methi leaves can also be added to Thalipeeth.
