Thalipeeth is a type of savoury multi-grain pancake popular in Maharashtra… The dough is prepared from a special flour made from roasted Chana daal, Urad daal, coriander seeds, cumin seeds, wheat, and rice known as bhajni.Onion, fresh coriander and other vegetables and spices are added when kneading the dough.
We Maharashtrians usually make bhajni at home or else it is easily available in market.
Here i have used home made bhajni.
Ingredients for Thalipeeth Bhajni:
1 kg Rice
100 gms Jowari
100 gms Wheat.
100 gms Chanadal.
100 gms Moong Dal.
100 gms Urad Dal.
1 small cup Jeera.
1 small cup Corriander seeds.
1/2 small cup Fenugreek seeds.
Method:
Roast all above items on slow flame for 15 minutes.Let it cool down completly.
Now grind it to fine powder
Store in airtight container and use as required.Can be stored for more than year in refrigerator.
Readymade flour is also easily available in market.
To make thalipeeth:
1 cup Thalipeeth Bhajni.
1/2 cup chopped Onions.
1/4 cup chopped Corriander leaves.
1 tsp Chilli powder.
1/4 tsp Haldi powder.
Salt to taste.
Oil for shallow frying.
Plastic sheet or banana leaf.
Luke warm water.
Method:
In a bowl mix all the above ingredients except oil.
Knead to form a semi soft dough using luke warm water as required.
Take a clean plastic sheet and grease it with little oil.Take a lemon size ball of dough and pat with fingers to form a pan cake.grease finger tips with oil if required.
Now make 3 to 4 small incersions on the pan cake.
Heat a griddle and transfere the pan cake on it,ensuring that plastic doesn’t touch the griddle.Smear oil in the incersions and on side.
Cook on both the sides till crisp.
Remove and Serve hot with tomato ketchup or chutney of your choice.
Tip:Other vegetables like grated carrots,cabbage or finely chopped methi leaves can also be added to Thalipeeth.
