Pav Bhaji is a hurried meal. This is a spicy blend of vegetables in onion- tomato gravy served with pav that is roasted with butter.When I am lazy to cook on an entire meal….this is the first dish that comes to my mind.
Ingredients:
1 cup roughly chopped Carrots.
1 cup roughly chopped Cauliflower
1 cup roughly chopped Capsicum
1& 1/2 cup boiled and mashed Potatoes.
1 cup boiled Green peas.
1 packet Maggi Bhuna masala(with ginger-garlic).
2 tbsp Everest Pav Bhaji masala.
1/2 tsp Turmeric powder.
1 tsp Chilli Powder.
1 tsp Dhana-Jeera powder.
Salt to taste.
1 packet Butter.
4 Ladi Pav.
1 Onion finely chopped.
1 Lemon cut into wedges.
2 tbsp finely chopped Corriander leaves.
Method:
In a cooker mix together carrots,capsicum & cauliflower.
Add 1 cup water and cook till 3 whistles.
Let it cool,add boiled and mashed potatoes and blend it well with a hand blender.
In a thick bottomed pan heat 2 tbsp butter,add contents of one packet of Maggi Bhuna masala(with ginger-garlic).
Add pav bhaji masala,chilli powder & turmeric powder,Fry well adding little water.
Let the masala cook well,approximately for 2 minutes.
Add pureed vegetables and salt.Mix well cover and cook for 5 minutes.
Add boiled green peas and mix well.
Keep aside.
Slice each pav into 2 horizontally. Apply a little butter to each side. Heat a large tava and cook the pav on both sides till the pieces are lightly browned.
Now serve Pav bhaji with pav,onions, chopped corriander leaves and lemon wedges.
