Amrakhand (Mango Shrikhand)

Ingredients:

1/2 kg Curd.

100 gm (half tin) Condensed Milk.

1 & 1/2  cups fresh Mango Puree.

1/2 cup fresh Mango pieces.

1/2 tsp Cardamom powder.

Method:

Put curd in a muslin cloth and allow to hang for 30 minutes
Beat well till smooth to remove any lumps.

Mix the curd with condensed Milk and mashed puree.

Add mango pieces and cardamom powder.

Chill for 30 minutes and serve with puri or phulka.

Multi Grain & Oats Pudla.

Pudlas are easy to make pancakes made from Besan,spices and vegetables,here is a dish in which I have made some changes to make it little more healthy.

Ingredients:

2 Cups Multigrain Aata.(Easily available in market,I used Pilsbury Multigrain Aata)

1/2 cup Oats(mildly roasted).

1 tsp Chilli powder.

1/2 tsp Dhana-Jeera powder.

1/2 tsp Turmeric powder.

Salt to taste.

2 tbsp chopped Corriander leaves.

2 pinch Fruit salt.

Oil for smearing.

Method:

In a bowl mix together all the ingredients except oil and fruit salt.

Add water as required,consistency should be like dosa batter.

Keep aside for 10 minutes.

Heat a griddle and smear some oil on it.

Add fruit salt to the batter and mix well.

Make small pancakes out of this batter.

Cover and cook till crisp,flip around and cook on other side.

Finish the remaining batter the same way.

Seve hot with chutney or sauce.

This is an easy to make tasty and healthy snack made from leftover idlis.

Ingredients:

8 Rice idlis(chopped into cubes).

1 tbsp Oil.

1/2 tsp Mustard seeds.

1/2 tsp Jeera.

Pinch of Asafoetida.

6 Curry leaves.

2 Green chillies chopped.

1/8 tsp Chilli powder.

1/8 tsp Pepper powder.

Salt to taste.

2 tbsp Barik sev.

2 tbsp Salted boondi.

1 tbsp chopped Corriander leaves.

1 tbsp Pudina Chutney.(Optional)

1 tbsp sweet Tamarind Chutney(Optional)

Method:

In a pan heat oil,add mustard seeds,jeera,asafoetida ,green chillies and curry leaves,stir well.

Add chopped Idli,sprinkle chilli powder,salt and pepper powder.Mix well.

Cover and cook for 2 to 3 minutes stirring in between.

Switch of the gas,and add sev,boondi and chopped corriander leaves.

Mix well and serve hot.

If desired pudina and tamarind chutney can also be added to this dish.
