Potato Bhaji with Egg




2 cups Potatoes washed and cubed (with skin )

1 cup chopped Onion.

1/4 cup chopped Tomatoes.

4 Eggs.

1 tbsp Oil.

1/4 tsp Mustard seeds.

1 pinch Asafoetida.

1 tbsp Malvani masala.

1/4 tsp Haldi powder.

Salt to taste.

2 tbsp Vatan (Refer Glossary)

1 tbsp chopped Corriander leaves.


In a pan heat oil,add mustard seeds,asafoetida and haldi powder.

Add potato cubes,malvani masala and salt,mix well,sprinkle little water ,cover and cook till potatoes are 3/4 th cooked.

Add tomatoes and cook further for 2 minutes.


Now break each one at a time in a bowl and add to potato mixture.

Add chopped corriander leaves.



cover and cook till eggs are completely cooked.

Serve hot with chappati.
