Shirala (Ridge Gourd) Bhaji

Ingredients:

2 cups chopped Shirali.

1 big chopped Onion.

1 small chopped Tomato.

1 Tbsp Oil.

1 tsp Malvani masala.

1.4 tsp Haldi powder.

Salt to taste.

1/2 tsp grated Jaggery.

2 tbsp Vatan(Refer Glossary)

Method:

Wash and wipe dry Shirali.

With help of peeler,peel out the outer skin.

Cut it lengthwise and scoop out seeds,cut further into 2 pieces.

Now,chop them finely.

Heat oil in a pan,add onions and saute for 2 minutes.

Add chopped shirali,haldi,masala and salt,mix well.

Cover and cook for 5 mins,stirring once.

Add chopped tomatoes and jaggery.mix well,cook for further 5 mins,now add vatan,mix well.

Cook for another minute.

Serve hot with chappati.

Tip:Cooked kala chana,chana dal or potatoes can also be added to this bhaji.
