Jhatpat Chicken Frankie

Frankie, is a popular and cheap version of the hi-fi wraps and rolls!

Frankie is a roti stuffed with fillings,vegetarian or non vegetarian which can be had on go without messing your hands just like sandwiches.

I have named this as a jhatpat Frankie because it’s made from ready made paratha and restaurant bought Chicken Tikka and hence can be made in a jiffy.

We usually make this when we have leftover tikkas or butter chicken.

Do give it a try….is hit with kids at my home..

Ingredients:

2 Frozen Malbari Paratha

4 Eggs (beaten with salt and pepper)

½ cup Green Mint Chutney.

4 tbsp Mayonnaise.

1 cup thinly sliced Onions,Capsicum and Cucumber(marinated with salt and chat masala).

1 portion(6 piece) Chicken Malai Tikka.

1 tbsp Oil.

Method

Add salt and chat masala to sliced onions,Cucumber and capsicum, keep aside.

Beat eggs well and keep aside.

Chop chicken tikkas into small pieces, keep aside.

Heat pan add little oil and roast frozen paratha well,till cooked.

Whisk the eggs well. Pour some of the eggs over the roti and allow it to set.

Turn over and let the underside get cooked.

Place the roti egg side up on a board.

Spread green chutney and mayonnaise,top up with prepared salad.

Place half of the chopped chicken tikkas on the roti.

Roll the frankie tight.

Wrap the bottom with silver foil and serve hot immediately.
