Kurmura and Khakra Chiwda.

This is an easy to make handy dish,I usually  carry this in tiffin to work as breakfast,you can make it more healthy and filling by adding chopped onions,tomatoes, cucumber,corns to this dry mixture…..

ingredients  :

4 cup Kurmura.

1 cup Khakra pieces (any flavour)

1/4 cup roasted Peanuts.

1/4 cup Daliya.

1 tbsp Oil.

1 tsp Rai.

1 tsp Jeera.

1 tsp Badishep (aniseeds)

1 tsp Sugar.

1/8 tsp Asafoetida

1/8 tsp Haldi.

8 leaves curry patta

3 Green chillies chopped into large pieces.

2 tsp Chat Masala.

Salt to taste.

Method:

In a big,thick bottom pan heat oil.

Add Rai, jeera,asafoetida, badishep,curry leaves and chillies stir for a minute.

Add peanuts  and Daliya, stir fry for a min,add sugar,mix well.

Add kurmura and Khakra, add salt and chat masala.

Mix well.

Spread on paper.

Let it cool completely.

Store in air tight jar.

Chocolate Cups.

These are edible cups made from  chocolates,these can be used to serve ice creams,mousse,fruit salads….These are not very easy but can be perfected with practice, you need to handle them delicately,or else they will break up easily  while demoulding.

Ingredients

1/2 slab Chocolate compound

6 silicone moulds.

Method : 

Cut chocolate into small piece’s. Place it in microwave safe bowl.

Microwave  At high speed for 1 min.Remove and mix vigorously.

Take Clean  silicone  moulds.

Put around 3 tbsp melted Chocolate  in a silicone  mould,

Rotate the cup in such a way that chocolate should cover all sides of the cup.

Turn it upside down to drain all the excess chocolate  out from the cup.

keep in fridge for 5 mins.

Remove  and repeat the process.

Keep it in fridge for another  20 minutes.

Finish all the moulds in same manner.

After 20 mins remove  the moulds  from fridge,hold the mould in one hand and gently peel of the mould from the chocolate cup.

Chocolate  cup  is ready.

Remove  all the cups from the mould.

keep in refrigerator.

just before serving  remove and fill with desired feeling and serve cold.

Mango Icecream.

I had come across  this recipe in Chef at Large,wanted to try this for a long time….finally nailed it.Here yummy mouthwatering  mango icecream is served  in chocolate edible cup…eat ur icecream  and cup too…….Here I am posting only icecream recipe,recipe for chocolate cup will be posted soon…

Ingredients : 

2 cup Condensed Milk (1 tin Milkmaid/Mithai mate)

2 cup Milk.

2 cup Mango Pulp.

400 gm Whipped Cream.(Ref glossary no 14)

Method :

Mix together mago pulp,milk and condensed mik in a pan and beat well.

Transfer to a plastic box and keep in deep fridge.

Let it set for 3 hours,remove and beat well with hand blender.

Add whipped cream and mix with light hand

Transfer  back to plastic box and keep in deep fridge for 6 to 8 hours or till completely set.

Scoop out and serve immediately  in chocolate  cups (https://sameeraskitchen.wordpress.com/2015/05/12/chocolate-cups/)  or glass bowls.

Tip:You can also add chopped pieces of mangoes to this ice cream.

Yellow Dal with Ginger

In my home thisale dal is known as monu chi dal,monu is my nan, this is her recipe,so me,my mom,my aunt we all have named it after her.Combination  of ghee and ginger gives a varied taste to this otherwise  simple dal.

Ingredients:

1 Cup tur dal (Soaked in two cups of water for 2 hours).

1 Small onion chopped.

1 Small tomato.

2-3 Green chillies.

1 tbsp Ghee.

1 tsp mustard seeds.

1 tsp jeera.

1/2 tsp asafoetida.

5-6 Curry leaves.

1 tbsp Ginger chopped

1/2 tsp turmeric powder.

2 tbsp chopped corriander leaves.

Salt to taste.

Method :

Add chopped onion,tomatoes  and chillies to washed and soaked dal.

Pressure cook in cooker upto 3-4 whistles.

Heat ghee in a pan.Add mustard seeds,jeera,asafoetida,curry leaves,chopped ginger and turmeric powder.

Add cooked dal and salt.

Let it come to boil.

Add chopped corriander leaves and let it simmer for 2 minutes.

Serve hot with steam rice.

Simla Mirchi (Capsicum ) vegetable with jaggery.

This is a vegetable made with sweet twist,it is spicy with little  jaggery in it.

Ingredients:

1 cup Capsicum(diced)

1/2 cup Potato(deskinned & Cubed) Optional..

1/2 cup Onoin (chopped)

1/4 cup Tomato (chopped)

1 tbsp Oil.

1 tsp Mustard seeds.

1/2 tsp Jeera .

1/4 tsp Asafoetida.

1 tsp Chilli powder.

1/4 tsp Haldi powder.

1/2 tsp Dhana jeera powder.

1/2 tsp Garam masala powder.

Salt to taste.

1 tbsp Jagger (grated)

2 tbsp Coconut (grated.)

Method:

Chop Capsicum  and potato  in a 1 inch cubes.

In a pan heat oil.

Add mustard seeds,jeera ,asafoetida & onions,mix well.

Saute for 2 mins,add diced capsisum and potato,add chilli powder,turmeric powder,dhana-jeera powder and salt,mix well.

Sprinkle little water,mix well,cover and cook for 8 to 10 minutes,stir once in between.

Once potatoes are cooked add tomatoes and cook for another 2 minutes.

Add grated jaggery and Garam masala powder,mix well.

cover and cook for another minute,add grated coconut,mix well

Remove from heat.

Serve hot with chappati.

Grilled /Toasted Sandwich with Chinese Stuffing

In Goregaon ,we have a sandwich wala,who is famous for his variety  of grilled sandwiches namely Bombay to Goa, Highway,AK 47 and many more.This is my version of his sandwiches,tried on experimental  basis but turned into a hit….here goes the recipe…..

Ingredients : 

For the stuffing:

1 cup each chopped Cucumber,Tomato, Onion and Capsicum.

1 tbsp Oil.

2 tbsp Ching Schezwan chutney.

2 tbsp Tomato Ketchup

1/4 tsp Pepper  powder.

Salt to taste.

Other ingredients :

4 Slices Bread.(White/Brown)

2 tbsp Butter.

2 tbsp Mayonnaise

2 tbsp grated Cheese.

Method:

Heat oil in pan add onion,saute it for 2 mins,add Capsicum and cucmber ,saute for a minute.

Add Tomatoes and saute for another minute.

Mix well cover and let cook for 5 mins

Add Schezwan  chutney and tomato Ketchup, Pepper  powder,taste and add salt if required.

Keep it aside to cool.

Apply butter on one side of all  the bread Slices.

Place around 2 tbsp of stuffing on two slices of bread.

Top it up with Mayonnaise  and grated cheese.

Place  another slice of bread on top and press to make a sandwich.

Apply butter to outer sides of bread Slices and either grill in a grilled or toast on tawa till it becomes  crisp and brown from both the sides

Remove and cut to form triangles or serve as it is.

Spring Onion,Black Pepper and Cheese Paratha.

Spring onions are mostly  used in oriental  cuisine, so here is a little  twist,adding spring onion and cheese to this paratha gives it a distinct flavour.

Ingredients :

1 cup chopped Spring  Onion.

1 & 1/2 cup Multigrain Atta.

1/2 cup grounded Oats.

1 tbsp Oil.

1 tbsp Pepper powder.

3 tbsp grated Cheese.

Salt to taste.

Ghee for smearing.

Method : 

Wash,pat dry and finely chop spring onion.

In a pan,heat oil,add chopped Spring onion and cook for 2 mins.keep aside to cool.

In a food processor add all the ingredients  except Ghee along with cooked onion to form soft dough,add little water if required.

Cover and keep aside for half an hour.

Divide dough in lime size balls and roll out to form thick parathas using dry flour.

Heat a non stick  griddle and roast parathas on medium heat from both sides.

Smear Ghee and serve hot with sauce or pickle of your choice.

Tip : This parathas can be topped with grated cheese before serving.
