Grilled /Toasted Sandwich with Chinese Stuffing

In Goregaon ,we have a sandwich wala,who is famous for his variety  of grilled sandwiches namely Bombay to Goa, Highway,AK 47 and many more.This is my version of his sandwiches,tried on experimental  basis but turned into a hit….here goes the recipe…..

Ingredients : 

For the stuffing:

1 cup each chopped Cucumber,Tomato, Onion and Capsicum.

1 tbsp Oil.

2 tbsp Ching Schezwan chutney.

2 tbsp Tomato Ketchup

1/4 tsp Pepper  powder.

Salt to taste.

Other ingredients :

4 Slices Bread.(White/Brown)

2 tbsp Butter.

2 tbsp Mayonnaise

2 tbsp grated Cheese.

Method:

Heat oil in pan add onion,saute it for 2 mins,add Capsicum and cucmber ,saute for a minute.

Add Tomatoes and saute for another minute.

Mix well cover and let cook for 5 mins

Add Schezwan  chutney and tomato Ketchup, Pepper  powder,taste and add salt if required.

Keep it aside to cool.

Apply butter on one side of all  the bread Slices.

Place around 2 tbsp of stuffing on two slices of bread.

Top it up with Mayonnaise  and grated cheese.

Place  another slice of bread on top and press to make a sandwich.

Apply butter to outer sides of bread Slices and either grill in a grilled or toast on tawa till it becomes  crisp and brown from both the sides

Remove and cut to form triangles or serve as it is.
