Egg Fried Rice

This is a Chinese style rice preparation which is very easy to make at home and loved by all.

Chinese is one of the most popular cuisines in India, easily available on every street here.

This easy stir fry of rice, veggies, and egg,is an easy recipe for lazy days.Inspite of being simple its very flavorful.

Ingredients:

1 cup Long grain Rice.

3 Eggs.

1 tbsp Oil.

2 cups mixed vegetables finely shredded(Capsicum,spring onions,carrots,beans,cabbage)

2 tsp Ginger-Garlic paste

1 tbsp Soya sauce.

1/2 tspn Red Chilli sauce

Salt and Pepper powder to taste.

Method:

Wash & soak rice for half an hour in 2 cups of water.

Drain and keep aside.

Heat 1 tsp oil in a pan,add rice and cook till 3/4 th done with 1 1/2 cup boiling water.

Once cooked,remove in a plate and spread with help of fork to avoid lumping.

Shredd all the vegetables.Keep aside.

Beat the eggs till light and fluffy and keep aside.

Heat oil in a big wok/pan.

Add ginger garlic paste,stir for 2 minutes,add spring oninons stir on high flame for 2 mins.

Add all remaining vegetables and eggs,Stir fry for 2 minutes on high flame.Add sauces mix well.

Add cooked rice,salt and pepper.Mix well.

Stir fry for 2 to 3 minutes.

Remove and serve hot with gravy of your choice.

Tip:Shredded chicken or shrims can also be added to this rice.

Schezwan Sauce adds lots of flavour to this dish,if you are not a big fan of the same,you can skip it and instead add 1/2 tsp of red chilli sauce.

Egg Manchurian.

Manchurian is an ever popular chinese dish which is really easy to make.Here I gave replaced vegetable balls with boiled eggs,goes well with fried rice or noodles.

Ingredients:

4 Eggs hard boiled.

For the Sauce:

1 tbsp Garlic (finely chopped)

2 tsp Ginger (finely chopped)

2 tbsp chopped Spring onion greens.

1 cup Vegetable stock or water.

1 tbsp Soy sauce

1 tbsp Tomato Ketchup.

1 tbsp Cornflour mixed with 1/4 cup of Water.

1 pinch of Sugar

2 tsp Oil.

Salt to taste

1 tbsp chopped Spring onion greens for garnishing.

Method:

Peel and cut hard boiled eggs into two.keep aside.

For the sauce :

Heat oil in a wok or frying pan on a high flame. Add the garlic and ginger,stir fry over a high flame for a few seconds.Add chopped spring onions green,stir fry for a minute.

Add the soya sauce and tomato sauce, saute fir a minute,add water/stock let it come to boil,add cornflour paste, sugar and salt and simmer for a few minutes till the sauce thickens.

Once the sauce thickens,add eggs and simmer for 2 minutes.

Remove in a serving bowl & garnish with chopped spring onion greens.

Serve hot with fried rice.

Schezwan Egg Noodles.

Ingredients:

1 packet Noodles.

1 tbsp Oil.

2 cups mixed vegetables finely shredded(Capsicum,spring onions,carrots,beans,cabbage)

2 Eggs (beaten)

2 tsp grated Ginger-Garlic

1 tbsp Chings Schezwan Chutney.

Salt and Pepper powder to taste.

Method:

Boil noodles as per instructions on the pack,drain and keep aside.

Shredd all the vegetables.keep aside.

Beat eggs and keep aside.

Heat oil in a big wok/pan.

Add grated ginger garlic,stir for 2 minutes,add spring oninons stir on high flame for 2 mins.

Add all remaining vegetables ,Stir fry for 2 minutes on high flame.

Add schezwan sauce and beaten eggs,mix well and stirfry till egg is cooked.

Add cooked noodles ,salt and pepper.Mix well.

Stir fry for 2 to 3 minutes.

Remove and garnish with chopped spring onion greens.serve hot with gravy of your choice.

Tip:Shredded chicken can also be added to this rice.

Chilli Baby Potatoes.

This is a dish similar to chilli paneer or chilli chicken.Baby potatoes being the main ingredient here.Simple and easy to make dish,can be served as starter or with fried rice or noodles.

Ingredients :

15 Baby Potatoes boiled.

1 onion cut into cubes.

6 flakes Garlic,sliced.

3 tbsp Cornflour

1/2 tsp Baking powder

1 Capsicum chopped into pieces.

2 Green chilies slit lengthwise.

1 tbsp Soya sauce.

1 tsp Red chilli Sauce.

3 tbsp Oil.

Salt to taste .

Method :

Clean and cook potatoes in pressure cooker till 3 whistles.

Let cool,drain and pat dry.

Cut into 2,sprinkle cornflour,baking powder and salt on potatoes.

Heat 2 tbsp oil in a frying pan and fry potatoes  till crisp  from  both the sides.Remove on absorbant paper.keep aside.

Cut onion,capsicum in cubes.split open green chillies.

Slice Garlic.

Heat remaining oil in a pan,add garlic till it turns light brown.

Add green chilies, onion and capsicum.stir fry on high flame till cooked.

Add soya sauce and red chilli sauce,mix well.Add half a cup of water.

Add 1 tbsp Cornflour  dissolved in 1/2 cup water.

Mix well.Let it come to boil,lower the flame and add fried potatoes.

Mix well till all the potatoes are covered with the sauce.

Check for salt,add if required.

Remove in serving bowl and garnish with chopped  capsicum.

Vegetable Crispy

This is a yummy chinese dish usually served as starters. Crispy vegetables coated with tangy sauce.Various vegetables can be used in this dish,here I have used potatoes, babycorns and capsicum…..you can also use Paneer, cauli flower, cabbage and carrots.

Ingredients :

6 Baby corns.

2 Capsicum.

2 Potatoes.

1 cup Maida

2 tbsp Cornflour

1/2 tsp Black pepper powder.

Salt to taste.

Oil for frying

For Sauce:

2 tbsp Oil

1 tbsp Garlic ( finely chopped )

2 tbsp Onion chopped

1 tbsp Red chilli sauce

1 tbsp Soya sauce

2 tbsp Tomato Ketchup

1/2 tsp Black pepper powder.

1 tbsp Cornflour dissolved in 1 tbsp water.

Salt to taste.

Method:

Mix cornflour, maida, salt and pepper powder in a bowl with enough water to make a thick batter. Keep aside.

Cut all vegetables in 1 inch cubes or strips.

Keep soaked in salt water for 10 minutes.Drain, pat dry and add to batter, mix well till all the vegetables are coated well.

Heat enough oil in pan and deep fry vegetables till cooked and crisp.Drain on absorbant paper and keep aside.

For the  sauce heat oil in a pan, add garlic sauté till light brown now add oninons sauté for another minute.

Add soya sauce, chilli sauce and tomato sauce, stir for a minute, add pepper powder and salt.Mix well. Add 1 cup of water, let it come to boil, now add Cornflour dissolved in water, stir well.

Sauce will start thickening, add fried vegetables and stir fry on high flame till all the vegetables are well coated in the sauce.

Vegetable Manchurian Fried Rice

This is a one meal chinese dish.Easy and fast to make and yummy to taste.

For The Vegetable Balls:

3 cups finely chopped vegetables(cabbage,carrots,cauli flower)

3 to 4 clove of garlic

2 invh piece of Ginger.

2 tbsp cornflour

Salt and Black pepper powder to taste.

1 tsp Soya sauce.

oil for deep-frying

For The Sauce

1 tbsp Garlic (finely chopped)

2 tsp finely chopped Ginger.

2 tbsp chopped Spring onion greens.

1 tbsp chopped Capsicum.

1 cup Vegetable stock or water.

1 tbsp Soy sauce

1 tbsp Cornflour mixed with 1 cup of Water.

1  pinch of Sugar

2 tsp Oil.

Salt to taste

1 tbsp chopped Spring onion greens for garnishing.

For the Rice:

1 cup Long grain Rice.

2 tbsp Capsicum chopped in small cubes.

2 tbsp spring onion chopped finely.

2 tsp Ginger-Garlic paste

1 tbsp Soya sauce.

Salt and Pepper powder to taste.

Method :

For the vegetable balls:

In a food processor,chop together all the vegetables, ginger & garlic.

Shape spoonfuls of the mixture into small balls. If you find it difficult to form balls, sprinkle a little water to bind the mixture.

Deep fry in hot oil until golden brown.

Drain on absorbent paper and keep aside.

For the sauce :

Heat the oil in a wok or frying pan on a high flame. Add the garlic and ginger ,stir fry over a high flame for a few seconds.

Add chopped spring onions green and capsicum stir fry for a minute.

Remove ina bowl and keep aside.

For the Rice :

Chilli Paneer

Few days back I got a chance to connect with my old time school buddy, Ricky Jariwala who is settled far off in UK now. We got in touch after almost 26 years.One fine day, I came to know he is visiting India and will surely come home, being a foodie my first question to all my visitors is “What will you eat, what’s your favourite dish ?”….and the answer came Chilli Paneer! Paneer is not my forte…I am not a dairy product person, so I stay away from Paneer, milk, curd…..etc.

For once thought will order from a Chinese joint, but then I had been boasting so much about my cooking talent to my friend..It would have been unfair.So after lots of thinking and research on Paneer. …I ended up making Chilli Paneer.

Happiest person to have it was ofcourse Shonty, who is a die hard Paneer fan & a special thanks to Sanjana for all the help and tasting….So here goes the recipe….adapted from Tarla Dalal’s recipe, with little changes here and there.

Actually this is a traditional Chilli chicken dish,modified for vegetarians. Can be served as starters or as an accompaniment with rice or noodles.

Ingredients:

1 cup Paneer cut into 12 mm strips.

Oil for deep frying.

Mix into thick batter:

1/4 cup Corn flour.

1/4 cup Maida.

pinch of Baking powder.

Salt to taste.

Other Ingredients:

1 tsp Ginger grated.

1 tsp Garlic grated.

3 Green Chilles split opened.

1/4 cup Capsicum chopped into big pieces.

1/4 cup Onion chopped into big pieces.

1 tsp Soya sauce.

1 tsp Sugar.

1 tbsp Cornflour mixed with 3 tbsp water.

1 tsp Oil.

Salt to taste.

Method:

Combine all the ingredients for the batter in a bowl to make a smooth paste by adding 1/4 cup water.keep it aside.

Wash Paneer pieces in a bowl of water,now drain and add to prepared batter.

Heat oil in a non stick pan, coat the Paneer pieces well in the batter and deep fry in hot oil till golden brown.

Drain on absorbant paper and Keep aside.In a heavy bottom pan , heat oil, add ginger and garlic, saute for a minute, add green chillies, onions and Capsicum and saute for another minute on high flame.

Add soya sauce , sugar, salt and 1/2 cup water, let it come to boil, now add Cornflour mixed in water, mix well, gravy will now start to thicken up.

Add fried Paneer pieces, toss in with light hand.

Remove in a serving bowl, garnish with green chillies and serve immediately.

Tip:Chicken can be used in above dish instead of Paneer to make chilli chicken.

Chinese Bhel

Chinese bhel is a crispy chat available everywhere on roads of Mumbai, this is one and only  chaat that is served on a chinese stall.Its easy to make yummy receipe.

Ingredients:

2 cups fried Noodles (easily available in market)
1/2 cup thinly sliced Capsicum
1/2 cup shredded Cabbage
1/2 cup thinly sliced Carrot.
1/4 cup thinly sliced Onions.
1/4 cup boiled Corns.
1/4 cup Schezwan Sauce.
Method:
 In a big bowl take fried noodles.
 Add shredded vegetables.
Add sauce and mix well.
Remove in a bowl and serve immediately.
Tip-You can also add little tomato ketchup if you want to make it less spicy.

Boil the noodles as per instructions. run cold water through the noodles when done and add 1 tsp of oil, so they dont stick.

Shredd all the vegetables.
