Spicy Masala Eggs

 

Ingredients:

6 boiled Eggs.

1 tbsp Oil.

1/4 tsp Chilli powder.

1/4 tsp Turmeric powder.

1/4 tsp freashly ground Black pepper.

Salt to taste.

chopped Corrinder leaves for garnishing.(Optional)

Method:

Boil,peel and cut eggs into half.

Heat oil in a pan,add turmeric powder and chilli powder,add eggs cut side placing down.

cook for a minute or two on slow flame,turn around,sprinkle salt and pepper powder,cook for another minute or two.

Remove in a plate and garnish with chopped corriander leaves.(Optional).

Serve hot.

Tip:These eggs can be served with anything,tastes good even with plain Dal rice,can also be served as starters by inserting toothpick in them.

French Toast with Honey Butter.

Ingredients:

4 slices of Bread.

2 Eggs.

2 tbsp Milk.

1/2 tsp Cinnamon powder.

2 tbsp Butter.

For Honey Butter:

1 tbsp Honey.

1 tbsp Butter.

A pinch of Cinnamon powder.

Method:

In a bowl beat together eggs,milk and cinnamon powder.

Heat a frying pan,smear with butter.

Take a slice of bread and dip it from both the sides in egg and milk mixture.

Let the excess mixture drip down,now place this slice in frying pan and roast from both the sides.

In a bowl mix together honey, butter and cinnamon powder well.

Once the bread is roasted from both the sides remove in a plate,spread some honey butter,cut inti triangles and serve hot.

Tips:Instead of Honey butter ,poedered sugar can also be sprinkled on top before serving.

Egg Biryani

I had seen this receipe in one of the cooking shows,tried it with some variation and it turned out well…..

Ingredients:

6 Hard boiled eggs.(Peeled and cut into halves)
1 Cup Basmati rice soaked and drained.
3 tbsp Ghee.
6 Cloces
6 Green cardamoms.
2 Small stick Cinnamon.
2 medium Onions.
1 large Potato(Cut into cubes and fried)
2 tbsp Cashewnuts fried.
2 tbsp Green peas
2 tbsp Corn(steamed)
1 large Tomato.
1 tbsp Ginger-Garlic Paste.
4 Green chillies.
1/4 tsp Chilli powder
1/4 tsp turmeric powder.
4 tbsp Yogurt.
1/2 cup Browned onion.
1/2 cup Fresh mint leaves.
Salt to taste.
2 cups Boiling water.
Method:
Heat 1½ tbsps ghee in a non-stick pan.
Add cloves, green cardamoms and cinnamon and sauté on medium heat.
Cut onions into cubes and add. Sauté on medium heat.
Heat 1½ tbsps ghee in a non stick kadai. Add turmeric powder, red chilli powder and hard boiled eggs.
Toss lightly, add salt. Cover and cook on low heat. When the eggs are lightly browned remove them into a bowl
Cut tomatoes into cubes. Add ginger-garlic paste to the onions and sauté for ½ minute. Add tomatoes and salt and let them cook.
 Add whole green chillies to the onion-tomato mixture and mix. Add rice,potatoes,peas,corns , cashewnuts  & yogurt, mix well.
Add ½ cup fried onions and mint leaves and mix. Add 2 cups water and mix gently and let it boil on high heat.
Add eggs.
Cover, reduce heat and cook till the rice is cooked. Serve hot garnished with  a mint sprig.
Tip:Same recipe can be used to make veg biryani by skipping eggs and adding some more vegies of your choice.

Corn & Egg Delight

Yesterday my son was unwell and wanted something different for breakfast so I made this and he just loved it…..

Ingredients:

2 Slices of bread(white/brown)

2 Eggs.

2 tbsp Corn(steamed)

2 tbsp Chopped corriander.

Salt to taste.

2 tbsp Butter.

1 tsp Black pepper powder.

Method:

Take two slices of bread,and cut out the center with a cookie cutter of your choice.

Heat a griddle on medium flame.

Apply butter on both the sides of bread and put on griddle along with the centre portion.

In center of the bread pour one egg,making sure to fit the yolk in the center portion.

Sprinkle salt,black pepper powder and chopped corriander on it.Put some corn  in the griddle and toss it in little butter.

If your kid loves half cooked egg,serve it half cooked or else turn on other side till egg is cooked from both the side and bread becomes crisp.

Remove it in a serving dish,place the cut portion back on the bread,top up with corns and serve hot with ketchup.

Kids will just love it.

Tip-Many other vegetables like chopped onion,tomatoes,mushrooms,capsicums,etc….can be added to this dish along with corn.White bread or brown bread can be used for making this dish.

Masala Omelete

Ingredients:

2 Eggs.

1 Onion chopped.

1/2 Tomato chopped.

Few sprigs of Corriander leaves.

1/4 tsp Turmeric(Haldi) powder.

1/2 tsp Chilli powder.

1/2 tsp Dhana jeera powder.(corriander-cummin powder)

Salt to taste.

1 tbsp Oil.

Method:

Mix together all the above ingredients except oil and egg.

Beat egg,add all other ingredients.

Heat tava,add oil.Add the beaten egg mixture,spread in a round shape using spoon.

Cook on both sides on medium heat.

Serve hot with bread or roll of your choice.

Egg Bhurji

During my college (Hotel mgmt) days.We (students))used to often go to Hotel Taj for waiting(To work as assistants,to gain experience )after college hours.At times we used to reach churchgate station at late night to catch the last train to come back home, if we had some time in hand before the train comes,we would rush to have Bhurji pav…sold outside churchgate station,this is way back in 1995 or 1996,but i can still remember the taste of that Bhurji.That would be the only  stall open at that hour of night  with just 2 guys catering to so many people. People used to gather in crowds to have bhurji pav………..and the bhurji was out of this world.I would someday love to go and check if this stall still exists…..

Ingredients:

2 Eggs

1 Onion chopped

1 Tomato chopped.

2-3 Green chillies chopped finely.

1/4 Cup chopped corriander leaves.

1/2 tsp turmeric powder.

1 tsp chilli powder.

1 tbsp oil.

Salt to taste.

Method:

Heat oil add chopped onion and tomato.

Cook till onion becomes pinkish in colour.

Add turmeric powder and chilli powder.

Add broken eggs one by one.Add salt.

Stir well to mix.

Add chopped corriander leaves.

Cover and cook for 3-4 minutes,till the eggs are cooked.

Serve hot,with pav or garlic loaf.

Egg Masala

This is one of the easiest receipe.I am a big fan of Maggi bhuna masala.Its a blessing for working woman like me.I will be posting many receipes using this masala , no cutting/chopping required…

  Ingredients:

6 Eggs (boiled,shelled,cooled and cut into two lengthwise)

1 packet maggi bhuna masala(for gravy dishes-with ginger-garlic)

1 packet maggi coconut milk powder or 1 cup fresh cocomut milk.

2 tsp Malvani masala(will post the receipe in masala categorie soon)

1/2 tsp turmeric powder.

2 tbsp vatan.(Check glossary)

salt to taste.

Few leaves of corriander finely chopped for garnishing.

Method:

Heat a kadhai on medium flame.

Empty entire packet of maggi bhuna masala.

Add malvani masala and turmeric powder.

Roast for a minute,add vatan and half cup water.

Let it boil for a minute or two.

Add maggi coconut milk powder mixed in one cup of water.Add salt as per requirement.

Let it boil for a minute.Add eggs.Cover and cook for 2 minutes.Garnish with chip corriander leaves.

Serve hot with your choice of Paratha,roti ,bhakri or rice.

Tip-Malvani masala is easily available in many shops,I usually buy it from Malvani jatra(fair) which is held in Goregaon-Best colony ground twice a year.

Vatan is used in most of the malvani gravy dishes,its a paste made out of rasted onions and coconut.
