Vegetable Crispy

This is a yummy chinese dish usually served as starters. Crispy vegetables coated with tangy sauce.Various vegetables can be used in this dish,here I have used potatoes, babycorns and capsicum…..you can also use Paneer, cauli flower, cabbage and carrots.

Ingredients :

6 Baby corns.

2 Capsicum.

2 Potatoes.

1 cup Maida

2 tbsp Cornflour

1/2 tsp Black pepper powder.

Salt to taste.

Oil for frying

For Sauce:

2 tbsp Oil

1 tbsp Garlic ( finely chopped )

2 tbsp Onion chopped

1 tbsp Red chilli sauce

1 tbsp Soya sauce

2 tbsp Tomato Ketchup

1/2 tsp Black pepper powder.

1 tbsp Cornflour dissolved in 1 tbsp water.

Salt to taste.

Method:

Mix cornflour, maida, salt and pepper powder in a bowl with enough water to make a thick batter. Keep aside.

Cut all vegetables in 1 inch cubes or strips.

Keep soaked in salt water for 10 minutes.Drain, pat dry and add to batter, mix well till all the vegetables are coated well.

Heat enough oil in pan and deep fry vegetables till cooked and crisp.Drain on absorbant paper and keep aside.

For the  sauce heat oil in a pan, add garlic sauté till light brown now add oninons sauté for another minute.

Add soya sauce, chilli sauce and tomato sauce, stir for a minute, add pepper powder and salt.Mix well. Add 1 cup of water, let it come to boil, now add Cornflour dissolved in water, stir well.

Sauce will start thickening, add fried vegetables and stir fry on high flame till all the vegetables are well coated in the sauce.

Remove in serving dish and serve hot.

Chilli Paneer

Few days back I got a chance to connect with my old time school buddy, Ricky Jariwala who is settled far off in UK now. We got in touch after almost 26 years.One fine day, I came to know he is visiting India and will surely come home, being a foodie my first question to all my visitors is “What will you eat, what’s your favourite dish ?”….and the answer came Chilli Paneer! Paneer is not my forte…I am not a dairy product person, so I stay away from Paneer, milk, curd…..etc.

For once thought will order from a Chinese joint, but then I had been boasting so much about my cooking talent to my friend..It would have been unfair.So after lots of thinking and research on Paneer. …I ended up making Chilli Paneer.

Happiest person to have it was ofcourse Shonty, who is a die hard Paneer fan & a special thanks to Sanjana for all the help and tasting….So here goes the recipe….adapted from Tarla Dalal’s recipe, with little changes here and there.

Actually this is a traditional Chilli chicken dish,modified for vegetarians. Can be served as starters or as an accompaniment with rice or noodles.

Ingredients:

1 cup Paneer cut into 12 mm strips.

Oil for deep frying.

Mix into thick batter:

1/4 cup Corn flour.

1/4 cup Maida.

pinch of Baking powder.

Salt to taste.

Other Ingredients:

1 tsp Ginger grated.

1 tsp Garlic grated.

3 Green Chilles split opened.

1/4 cup Capsicum chopped into big pieces.

1/4 cup Onion chopped into big pieces.

1 tsp Soya sauce.

1 tsp Sugar.

1 tbsp Cornflour mixed with 3 tbsp water.

1 tsp Oil.

Salt to taste.

Method:

Combine all the ingredients for the batter in a bowl to make a smooth paste by adding 1/4 cup water.keep it aside.

Wash Paneer pieces in a bowl of water,

now drain and add to prepared batter.

Heat oil in a non stick pan, coat the Paneer pieces well in the batter and deep fry in hot oil till golden brown.

Drain on absorbant paper and Keep aside.

In a heavy bottom pan , heat oil, add ginger and garlic, saute for a minute, add green chillies, onions and Capsicum and saute for another minute on high flame.

Add soya sauce , sugar, salt and 1/2 cup water, let it come to boil, now add Cornflour mixed in water, mix well, gravy will now start to thicken up.

Add fried Paneer pieces, toss in with light hand.

Remove in a serving bowl, garnish with green chillies and serve immediately.

Tip:Chicken can be used in above dish instead of Paneer to make chilli chicken.

Oregano flavoured Cheesy Mayonnaise Corn

This recipe is dedicated to my lovely neice Sanjana,who is a big big foodie,loves to eat as well as cook (recently cultivated hobby )For sometime now she has been following my blog closely and experimenting  one dish every day.Some of my dishes  like sheera,bharli vangi,sevaiya kheer,aloo chi bhaji, plain yellow dal,pulao are her favourites…not to forget cakes.She was only 5 years old when I got married to her chachu and came in her life..since then we have been hanging out together and have  so many memories related to food…. masala dosa from Ratna,Mcd’s burgers,Omlete sandwiches made in her mom’s kitchen,plain bread jam,roadside pani puri,karanjis and prawns by my MIL,bhel puri /sev puri from our bhaiya,chats and chineese along with gola at Juhu beach,bhajji pav at Aksa……never ending spread at Global fusion.

Along with my good friend Afshan,she is approver of my food,any new dish tried has to go through her…and anything new tried by her anywhere has to come to me,thats our mutual understanding..Few days back she took  me to Jawahar nagar in Goregaon to eat cheesy corns,they were just yummilicious….but very costly 80 Rs for a bowl…So I decided to try it out at home and the result was unbelivable,was appreciated by everyone….so here goes the recipe….this is for you baccha,love u.

Ingredients: 

2 cups Corn kernels (steamed)

4 tbsp Mayonnaise.

1 tbsp Green pudina chutney.

1/2 tsp Sandwich masala.

1 tbsp Butter.

1/8 tsp Pepper powder.

1/8 tsp Chilli flakes.

1/4 tsp Oregano.

2 tbsp grated cheese.

1/2 tsp Olive oil.

1 tsp lemon juice.

Salt as required.

Method:

In hot steaming corn kernels,add all the above ingredients except cheese,mix well.

Remove in a serving bowl and top with grated cheese,serve hot.

Pita Sandwich

Pita is used to scoop sauces or dips such as hummus, and to wrap kebabs or falafel in the manner of sandwiches. Most pita are baked at high temperatures (450 °F or 232 °C), causing the flattened rounds of dough to puff up dramatically. When removed from the oven, the layers of baked dough remain separated inside the deflated pita, which allows the bread to be opened into pockets, creating a space for use in various dishes.

Ingredients:

4 Pita Bread.

2 cups Hummus.(.http://wp.me/p2osBx-mJ)

12 to 15 Falafel (.http://wp.me/s2osBx-falafel)

Slices of cucumber and Tomatoes.

Finely shredded Lettuce leaves.

2 tsp Olive Oil.

Method:

Cut each pita bread into two and warm the halves on a hot griddle using little olive oil,this will help open the pockets.

Keep all the ingredients handy.

Fill each pita bread half with little hummus,some tomato and cuccumber slices and shredded lettuce, a few falafels and a spoonful of the dressing on top.

Repeat for the remaining pita bread halves and other ingredients to make some more pita sandwiches.

Serve immediately.

Instant Focaccia

This is an easy to make mouth watering dish loved by kids.

Ingredients:

4 Hot dog buns.

8 flakes of Garlic.

1/2 cup finely chopped Tomatoes.

1 tbsp Tomato Ketchup.

1/4 tsp Chilli powder.

1/4 tsp Sugar.

1 tsp butter.

2 tbsp Olive oil/refined Oil.

1 tsp Oregano.

1/2 cup vegetables(Corn,mushrooms,capsicum,caramalisez onions)

1/2 cup grated cheese.

Salt to taste.

Method:

Heat butter in a pan,add garlic fry for a minute,now add chopped tomatoes,chilli powder,salt,tomato ketchup and sugar,mix well,add 2 tbsp water,cover and cook for 2 minutes or till tomatoes are cooked properly.Remove in a plate and keep aside.

Take 4 hot dog buns,cut it into half and then cut it lengthwise.

In a frying pan heat little olive oil,roast one side of bun till crisp.

Remove,top with made tomato sauce and any vegetable of your choice,I have used boiled corns here.

Sprinkle oregano and cheese.

Place it back in frying pan with filling on upper side,cover and cook till cheese melts.

Remove in a serving plate and serve hot.

Apple & Cinnamon Pancake with Honey

My son loves pancakes…so i keep on trying various combinations….this recipe is result of one of those trials…

Ingredients:

1 cup Maida.

1/2 cup peeled and grated apple.

3/4 cup Milk.

2 tbsp Castor sugar.

1/2 tsp Cinnamon powder.

1/2 tsp Baking powder.

Butter for smearing.

Honey  & 1 tsp Cinnamom  powder for serving.

Method:

Combine all the ingredients in a bowl,except butter.

Whisk well adding little water if required to make a smooth batter ,making sure no lumps remain.

Consistency should be that of dosa batter.

Keep aside.

Heat a non stick pan on medium flame,smear little butter,spread about 3 tbsp of batter to make a pancakeof about 4” diameter.

Cook the pancake over medium heat on both the sides untill golden brown.

Repeat with remaining batter to make more pancakes.

For serving,

Drizzle some honey and sprinkle some cinnamon powder .

Serve warm.

Pasta in Tangy Orange sauce

Pasta is a generic term for noodles of various lengths,widths and shapes,either accompanied with sauce or filled with other ingredients.

Ingredients:

 2 cups Pasta.

1 tbsp finely chopped Garlic.

½ cup Chopped Onions.

1/2 cup chopped Carrot.

1 cup chopped Tomatoes.

¼ cup chopped Capsicum.

¼ cup boiled corn kernels

2 tbsp Tomato Ketchup.

1 tsp Red Chilli powder.

¼ tsp Pepper powder.

¼ tsp dried Oregano.

Salt to taste.

1 tbsp Oil.

¼ cup grated Cheese.

 Method:

 Take plenty of water in a pot and bring it to rolling boil .

Add pasta to the boiling water with a little salt.Keep stirring it to prevent it from sticking to the bottom of the pan.

Cook pasta till tender.You can check if it is correctly cooked by tasting it. It should be tender yet firm.

Now drain the cooked pasta into a colander and run cold water through the pasta for about 10 secs. Keep it aside.

Heat oil in a pan, fry garlic and onion till they become soft.Add chopped tomatoes and carrots.

Add tomato ketchup and half cup water and cook until the sauce is boiling, then reduce heat and simmer for another 10 minutes.

Add  red chilli powder,oregano, salt and pepper powder.Mix well.

Keep aside to cool.

Blend it to a smooth sauce in a mixie.

In another pan heat 1 tbsp Olive oil.

Add chopped capsicum and boiled corn kernels,add little salt.

Add prepared sauce and mix well.

Add pasta and mix well.

Remove in a serving bowl and top up with grated cheese.

Heat in microwave for 30 secs or till cheese melts.

 Tip:I have used shell shaped pasta ,you can use any type of pasta.
