Egg Rice & Noodles Mix.

1 cup Long grain Rice.

1/2 cup Noodles.

1 tbsp Oil.

2 cups mixed vegetables finely shredded(Capsicum,spring onions,carrots,beans,cabbage)

3 Eggs (beaten)

2 tsp Ginger-Garlic paste

1 tbsp Soya sauce.

1/2 tbsp Red chilli sauce.

Salt and Pepper powder to taste.

1 tbsp Spring onion greens (chopped) for garnishing.

Method:

Wash & soak rice for half an hour in 2 cups of water.

Drain and keep aside.

Heat 1 tsp oil in a pan,add rice and cook till 3/4 th done with 1 1/2 cup boiling water.

Once cooked,remove in a plate and spread with help of fork to avoid lumping.

Boil the noodles as per instructions. run cold water through the noodles when done and add 1 tsp of oil, so they dont stick.

Shredd all the vegetables.

Beat eggs and keep aside.

Heat oil in a big wok/pan.

Add ginger garlic paste,stir for 2 minutes,add spring oninons stir on high flame for 2 mins.

Add all remaining vegetables ,Stir fry for 2 minutes on high flame.

Add sauces and beaten eggs,mix well and stirfry till egg is cooked.

Add cooked rice,noodles ,salt and pepper.Mix well.

Stir fry for 2 to 3 minutes.

Remove and garnish with chopped spring onion greens.serve hot with gravy of your choice.

Tip:Shredded chicken can also be added to this rice.

Vegetable Manchurian.

This ever popular chinese dish is really easy to make.

Ingredients:

For The Vegetable Balls:

3 cups finely chopped vegetables(cabbage,carrots,cauli flower)

3 to 4 clove of garlic

2 invh piece of Ginger.

2 tbsp cornflour

Salt and Black pepper powder to taste.

1 tsp Soya sauce.

oil for deep-frying

For The Sauce

1 tbsp Garlic (finely chopped)

2 tsp finely chopped Ginger.

2 tbsp chopped Spring onion greens.

1 cup Vegetable stock or water.

1 tbsp Soy sauce

1 tbsp Cornflour mixed with 1 cup of Water.

1  pinch of Sugar

2 tsp Oil.

Salt to taste

1 tbsp chopped Spring onion greens for garnishing.

Method: 
For the vegetable balls:

In a food processor,chop together all the vegetables, ginger & garlic.

Remove in bowl,add cornflour,soya sauce,salt and pepper mix well.

Sprinkle little water if required.

Shape spoonfuls of the mixture into small balls. If you find it difficult to form balls, sprinkle a little water to bind the mixture.

Deep fry in hot oil until golden brown.

Drain on absorbent paper and keep aside.

For the sauce :

Heat the oil in a wok or frying pan on a high flame. Add the garlic and ginger ,stir fry over a high flame for a few seconds.

Add chopped spring onions green,stir fry for a minute.

Add the stock, soya sauce, cornflour paste, sugar and salt and simmer for a few minutes.

Once the sauce thickens,add fried balls,simmer for 2 minutes.

Remove in a serving bowl & garnish with chopped spring onion greens.

Serve hot with fried rice.

Chocolate Pancake

I gifted myself with a book…aah! Chocolate by Chef Sanjeev Kapoor.

This is the first receipe that I tried from it…

Now Shounak wants this everyday for breakfast…

Ingredients:

1/4 cup Cocoa powder.

1/2 cup Chocolate chips.

3/4 cup Maida ( Refined flour).

11,2 tsp Baking powder.

1/4 tsp Salt.

1 Egg.

2 tbsp Caster sugar( powdered sugar)

1 cup Milk

2 tbsp melted Butter

Butter for greasing.

Chocolate sauce to serve.

Method:

Sift the flour,baking powder ,salt & cocoa powder together,keep aside.

In a big bowl break egg,add sugar,milk and melted butter,whisk well.

Add the flour mixture into the egg mixture and mix well till batter becomes smooth.

Mix in chocolate chips.

Heat a nonstick pan and grease it with a little butter,pour a ladleful of the batter and spread it thinly .

Cook,turning sides till golden brown on both sides.

Remove in a plate,spread some butter and drizzle with chocolate sauce.

Repeat the same to make remaining pancakes.

Serve immediately.

Tip:Same recipe can be used for dessert ,top it up with vanilla ice cream or whipped cream.

Hummus with Pita chips

Hummus is a Middle Eastern and Arabic food dip or spread made from cooked, mashed chickpeas blended with tahini, olive oil, lemon juice, salt and garlic.It is a very popular dish in Middle east.Hummus is high in iron and vitamin C .As an appetizer and dip, hummus is scooped with flatbread, such as pita. It is also served as  an accompaniment to falafel, grilled chicken, fish or eggplant. Garnishes include chopped tomato, cucumber, coriander, parsley, caramelized onions, sautéed mushrooms, whole chickpeas, olive oil, hard-boiled eggs, etc..

Ingredients:

2 cups of Chick pease( soaked overnight in 4 cups water and drained)

4 tbsp Olive oil.

10 cloves of Garlic.

5 tbsp Sesame seeds.(Dry roasted and cooled)

1 tsp Lemon juice.

Salt to taste.

Pinch of chilli powder.

1 tbsp chopped Corrinader leaves.

Method:

Soak the chick peas (Kabuli chana) overnight.In a pressure cooker,cook with sufficient water upto 5 whistles.

Drain and let cool.

In a blender mix together chickpeas,sesame seeds,garlic,salt,olive oil, lemon juice andthe strained water.

Blend well till a smooth paste is obtained.If mixture is too thick add 2 to 3 tbsp of water and blend well.

Remove this hummus in a serving bowl,sprinkle some chilli powder,garnish with chopped corriander leaves and serve with Pita Chips.

To make Pita chips: Pita bread is a type of flat bread easily available in market.Heat little oilve oil on a griddle and roast pita bread till light brown spots appear on both the sides.Remove and cut diagonally in 8 pieces.Serve with hummus.

Baked Tortillas with Cheese Sauce

This is a quick and easy-to-make recipe. These tortillas are baked and made  from a blend of whole wheat flour and maize flour instead of the traditional ones which are made from refined flour.

Ingredients:

1 cup Makai ka aata.

1/2 cup Whole wheat flour.

1/2 tsp Chilli powder.

1/2 tsp Ajwain.

Salt to taste.

Plain flour for dusting.

Method:

Combine all the ingredients in a bowl and knead into a soft dough using hot water.

Divide the dough into 6 equal portions.

Roll out each portion into a thin circle of 7″ diameter using flour generously

Lightly cook tortillas on a non stick pan.

Cut each tortilla into 6 triangular pieces.

Place the tortilla pieces in a single layer on a non-stick baking tray.

Bake at 190°Cfor 7 to 8 minuteor until the tortilla chips are crisp and lightly browned.

Cheese Sauce

This creamy cheesy sauce can be used for pasta dishes or serves with tortilla chips. This recipe is made in the microwave and takes less than a minute to cook.

Ingredients:

1 tbsp Butter

1 tbsp Maida.

2 tbsp grated Cheese.

1 cup Milk

Salt  & Pepper to taste.

Method:

Put the butter in a glass bowl and microwave on high for about 10 seconds.
Add the flour and microwave on high for 20 seconds, stirring once in-between after 10 seconds.
Add the milk and cheese and microwave on high for about 20 seconds. Do not boil.
Add salt and pepper.
