Chole Biryani

This dish is an innovative blend of rice and Kabuli chana.When served with a bowl of raita, this can be a really healthy and satisfying dish.

Ingredients:

2 cup  cooked biryani rice

3 tbsp chopped corriander (dhania)

2 tbsp chopped mint leaves (phudina)

1/4 tsp saffron (kesar) strands dissolved in 1/4 cup mlilk

1 tsp oil for greasing

For The Kabuli Chana Gravy

1 cup kabuli chana (white chick peas)

1 packet Maggi bhuna masala(with onion and garlic)

1 tsp chilli powder

1 tsp Chole masala

1/2 tsp Haldi powder

1 cup Dahi

1 tbsp oil

salt to taste

Method: 
For the kabuli chana gravy

Soak the kabuli chana overnight

Boil with a little water for 6 whistles the next day. Drain.

Heat the oil in a non-stick pan, add  bhuna masala and fry for a while.

Add the red chilli powder, turmeric powder,chole masala and 2 teaspoons of water and fry for 1 minute.

Add the dahi and stir for a while.

Add the cooked kabuli chana and salt and mix well. Keep aside.

To make Biryani:
To the cooked biryani rice, add the coriander, mint, and saffron milk. Keep aside.

Grease a large baking dish. Make 5 layers by spreading 1/3of the rice, then spreading ½ the kabuli chana gravy, next spreading 1/3of the rice and finally the remaining kabuli chana gravy and another layer of rice.

Cover with an aluminium foil and bake in a pre-heated oven at 200°c for 20 minutes.

Remove the foil and serve hot with raita of your choice..

Tomato Rice

1 cups Rice

2 Bay leaves.

1 tsp Shah jeera:

6 Cloves

1 ” Cinnamon stick:

2 Cardamoms: 2

2 Onions finely chopped

2 tsp Green chili-ginger-garlic paste

1 tsp Kasoori methi

1 tsp Red chili powder

1/2 tsp Cumin Powder

2 Tomatoes finely chopped

1 Tomato ( blanched, peeled and pureed)

2 tbsp Corriander leave finely chopped

Salt to taste

1 tbsp Ghee

Method:

Heat ghee in a thick bottom vessel, add shah jeera, cloves, cinnamon and cardamoms and stir fry 30 secs.

Add the sliced onions and saute for 3 mts. Add green chili-ginger-garlic paste kasoori methi and saute for 4-5 mts.

Add red chili powder and cumin powder and mix. Add chopped tomato, tomato puree and salt to taste and mix.

Cook on medium flame, till oil separates.

Reduce heat, add the rice, mix, saute for a mt. Add 2 cups of water and bring to a boil. Reduce flame and cook till rice is done.

Remove onto a serving bowl. Garnish with fresh coriander leaves.

Serve hot with raita of your choice.

Tri Colour Pulav

Ingredients:

1 cup Basmati rice

1/2 cup Green peas.

1/2 cup Carrots chopped.

12 Cashew nuts.

1 large onion sliced.

1 tsp Ginger-Garlic paste.

2 Green chillies.

1 tsp Lemon juice.

1 tsp Shahi Jeera.

8 Kalimiri (Pepercorns)

6 Lavang (Cloves)

2 Tamal patra (Bay Leaves)

5 Elaichi (Cardamom)

1/2 piece Dalchini (Cinamon)

1 tsp Oil.

1 tsp Ghee.

2 cups Boiling water.

Salt to taste.

Method:

Wash and soak rice for half an hour in 2 to 3 cups of water.Drain and keep aside.

Put water for boiling.

Heat Oil and ghee in a thick bottom pan,add jeera and all garam masala.

Add sliced onions,green chillies and ginger garlic paste,stir fry for 2 minutes.

Once the onions turn pinkish in colour,add rice,green peas,carrots ,cashew nuts and salt.

Mix well,stir for 2 minutes.Add boiling hot water.Once the water starts boiling add lemon juice.Mix well.

Cover and cook till water evaporates completely.Stir once or twice in between with light hand,ensuring rice grain is not broken.

Serve hot..

Tip:Other Dry fruits like Pistachio,almonds and raisins can also be addeded to this rice to make it rich.

Vegetable Fried Rice

Ingredients:

1 cup Long grain Rice.

1 tbsp Oil.

2 cups mixed vegetables finely shredded(Capsicum,spring onions,carrots,beans,cabbage)

2 tsp Ginger-Garlic paste

1 tbsp Soya sauce.

1/2 tbsp Red chilli sauce.

Salt and Pepper powder to taste.

 

Method:

Wash & soak rice for half an hour in 2 cups of water.

Drain and keep aside.

Heat 1 tsp oil in a pan,add rice and cook till 3/4 th done with 1 1/2 cup boiling water.

Once cooked,remove in a plate and spread with help of fork to avoid lumping.

Shredd all the vegetables.

Heat oil in a big wok/pan.

Add ginger garlic paste,stir for 2 minutes,add spring oninons stir on high flame for 2 mins.

Add all remaining vegetables and sauces.Stir fry for 2 minutes on high flame.

Add cooked rice,salt and pepper.Mix well.

Stir fry for 2 to 3 minutes.

Remove and serve hot with gravy of your choice.

Tip:Shredded chicken or diced egg omelet can also be added to this rice.

Peas (Matar) & Baby Potatoes Rice.

Ingredients:

1 cup Basmati rice

1/2 cup Green peas.

10 Baby potatoes(deskinned)

1 large onion sliced.

1 tsp Jeera.

2 Tamal Patra(Bay leaves)

1 tbsp Malvani masala.

1/4 tsp Turmeric powder.

4 tbsp Vatan(See Glossary)

1 tsp Ghee.

2 cups Boiling water.

Salt to taste.

Oil for frying potatoes.

Method:

Wash and soak rice for half an hour in 2 to 3 cups of water.Drain and keep aside.

Heat oil in a kadhai and fry baby potatoes till golden brown,remove and keep aside.

Heat ghee in a thick bottom pan,add jeera,tamal patra and sliced onions.

Once the onions turn pinkish in colour,add malvani masala,turmeric powder and vatan,stir fry for 2 minutes.

Add rice,green peas,and salt.

Mix well,stir for 2 minutes.Add boiling hot water.Once water starts boiling add fried potatoes.Mix well.

Cover and cook till water evaporates completely.Stir once or twice in between with light hand,ensuring rice grain is not broken.

Garnish with chopped tomatoes.

Serve hot with pickle and raita

Tip:Dry fruits like cashewnuts,almonds and raisins can also be addeded to this rice to make it rich.

Sambar Rice

This is a famous dish from South India..Its like Dal rice khichdi with vegetables…but taste is different..Also known as Bisi Bele Bhath in Karnataka.

Ingredients:

1/2 cup Rice.

1/2 cup Tuvar Dal.

1 cup mixed vegetables cubed(Carrots,Potatoes,Brinjals,Cauli flower,Beans,Green peas.)

1 Onion thickly sliced.

2 Medium sized Tomatoes chopped in big pieces.

1 tbsp Oil

2 tbsp Ghee.

1 tsp Mustard seeds.

1/4 tsp Fenugreek seeds.

1/4 tsp Asafoetida.

2 tsp MTR Bisi bele Bhath Masala.

1 tsp Red chilli powder.

2 Dried red chillies broken into pieces.

10 pieces broken Cashew nuts.

10 Curry leaves.

2 tsp Tamarind paste.

Salt to taste.

Method:

Mix together dal and rice,wash and keep soaked in 4 cup water for 1/2 hour.

Pressure cook for 4 whistles.Keep aside.

In a big non stick pan,heat 1 tbsp Oil & 1 tbsp Ghee.

Add mustard seeds,fenugreek seeds,asafoetida,curry leaves,dried chillies,cashew pieces and onions stir well till cashews and onions turn light brown in colour.

Add turmeric powder,chilli powder and MTR bisi bele bhath masala,mix well.

Add chopped vegetables and salt.Add half cup water,cover and cook till vegetables are cooked.

Add cooked dal and rice mixture,mix well,check for salt.Add water if required.Consistency should be semi solid.

Cover and cook for 5 minutes.Add i tbsp ghee.

Serve hot with pickle and Papad.

Methi Makai Pulav

Ingredients:

1 Cup Long Grain (Basmati) Rice (Washed and soaked in water for half an hour)

1/2 cup Corn (steamed)

1 cup Methi (fenugreek) leaves chopped

1 Onion sliced.

2 tsp Ginger-garlic paste.
2-3 green chilies chopped
1/4th tsp. turmeric powder
1 tsp Dhana jeera powder.
1/4 tsp Shshi Jeera.
4 Green Cardamom.
2 sticks Cinnamon.
4 Cloves.
6 Black peppercorns.
1Bay leaf.
1 tsp Sugar.
Salt to taste.
2 cups boiling hot Water.
Method:
Clean and wash methi properly,drain the water and finely chop it.

Heat oil and ghee in a pan,add shahi jeera and whole garam masala.

Add onions,green chillies & ginger-garlic paste.Saute well.

Add chopped methi leaves,corn,turmeric and dhana jeera powder.

Cover and cook till methi is cooked.Add rice and salt,saute well.

Add  hot water and cook covered on low flame till done.

Serve hot with chilled raita.
