Shengdanyachi Koshimbir.

This is one of the simplest and most addictive side dish.Can be served as salad with food or as an accomplishment with drinks.

Ingredients:

1 cup Peanut (roasted and fried).

1/4 cup Onion finely chopped.

1/4 cup Tomatoes finely chopped.

1 Green Chilli finely chopped.

1 tbsp Coriander Leaves finely chopped.

1 tsp Ginger grated.

juice of half Lemon.

Salt to taste.

Oil to fry Peanuts.

Method:

In a pan heat the oil,add lightly roasted Peanuts and get till crisp,remove on an absorbent paper and keep aside.

In a bowl mix together onion,tomatoes,ginger and green chillies.

To this bowl add peanuts and salt.

Add lemon juice and mix well.

Remove in a serving bowl garnish with chopped coriander leaves and serve immediately.

Tip:Do not skip adding ginger,as it brings in the magic in this dish.

Mixed Vegetables Kachumber.

Kachumber is a salad dish consisting of fresh chopped  vegetables,can be tomatoes, cucumbers, onions, carrots,etc.usually flavoured with lemon juice and chili powder.

It goes well with any indian meal.It has a slight tinge of spices which makes it very tasteful.

We usually have it with tikkas either paneer or chicken.

Ingredients:

1/4 cup Onions cut into thin slices.

1/4 cup Cucumber thinly sliced.

1/4 cup Cabbage thinly sliced.

1/4 cup Tonatoes thinly sliced.

1/8 cup Carrots thinly sliced.

1/8 cup Capsicum thinly sliced.

1/2 tsp Red Chilli Powder.

1/2 tsp Chaat Masala.

Juice of half Lemon.

1 tbsp Chopped Coriander Leaves.

Salt to taste.

Method:

In a big bowl mix all the vegetables,add lemon juice, red chilli powder, chaat masala powder,chopped coriander leaves and salt to taste. Mix well to combine.

Remove in a serving bowl and serve immediately.

Onion and Cucumber Kachumber.

This is a salad dish consisting of fresh chopped  vegetables,can be tomatoes, cucumbers, onions, carrots,etc.usually flavoured wirh lemon juice and chili powder.

It goes well with any indian meal.It has a slight tinge of spices which makes it very tasteful.

Ingredients:

Onions cut into thin rings.

1 Cucumber thinly sliced.

1/2 tsp Red Chilli Powder.

1/2 tsp Chaat Masala.

Juice of half Lemon.

1 tbsp Chopped Coriander Leaves.

Salt to taste.

Method:

Slice the onions thinly and separate into rings.Wash,peel and thinly slice cucumber.

Add lemon juice, red chilli powder, chaat masala powder,chopped coriander leaves and salt to taste. Mix well to combine.

Remove in a serving bowl,sprinkle some chilli powder on top and serve.Can also be served chilled.

Masala Laccha Pyaz.

This is a must try  dish.These delicious and tangy pickled onions are popularly known as Lacha Pyaz. Goes very well with most of the delicious North Indian meals.

Ingredients:

2 Onions cut into thin rings

1/2 tsp Red Chilli Powder.

1/2 tsp Chaat Masala.

Juice of half Lemon.

1 tbsp Chopped Coriander Leaves.

Salt to taste.

Method:

Slice the onions thinly and separate into rings.

Add lemon juice, red chilli powder, chaat masala powder,chopped coriander leaves and salt to taste. Mix well to combine.

Cover the bowl and allow the onions to rest in the lemon juice for about an hour. The Masala Lacha Pyaz is ready to be served.

Pomegranate & Pineapple Raita.

The raita is a simple recipe with many variations and can become spicy,plain, sweet or savory.

Curd is the main ingredient here,traditionally curd to mix-ins ratio is 2:1,so if we are using 2 cups curd,we will add a cup of mix-ins which can include mixed vegetables, boondi, fruits (like pineapple,pomegranate) or mint.

Most common spices used in any raita is roasted jeera powder and chat masala.

Raita has many variations and you can add absolutely anything to it.Posting some of the variation in my blog….

Ingredients:

2 cup Curds diluted with 1 cup water.

1/2 cup  Finely chopped Pineapple.

1/2 cup Pomegranate Seeds.

1 tbsp Coriander Leaves finely chopped.

1/2 tsp Sugar.

1/4 tsp roasted Jeera Powder.

Pinch of Black Pepper Powder.

1/8 tsp Chat masala.

Method:

In a bowl mix together curds,salt,sugar,pepper powder,chat masala,roasted jeera powder and chopped coriander leaves.

Whisk till smooth,add chopped pineapple and pomegranate seeds mix well.

Remove in a serving bowl.

Serve chilled with Biryani or Pulao of your choice.

Pomegranate & Moong Sprouts Koshimbir.

Koshimbir is a typical Maharashtrian salad served as an accompaniment to the main dish. Raw and juicy,it is quite refreshing and considered an essential accompaniment with a Maharashtrian meal.

Ingredients:

1/4 cup Pomegranate Seeds

1/4 cup Boiled Mong Sprouts.

2 green chillies finely chopped.

1 tbsp Coriander Leaves chopped.

1 tsp Lemon Juice.

Rock salt to taste.

Method:

Mix all the ingredients together,remove in a serving plate and serve as a side dish with a meal.

Chick pea & Peanut Salad

Today I had planned to make Aloo (Colacassio),so had soaked some peanuts and chickpeas,but couldn’t buy aloo leaves on my from work as it was raining very heavily.

Now I was left with soaked chickpeas and peanuts,so tried something out of it which tasted yummy….

Ingredients:

1/2 cup Chickpeas.

1/2 cup Peanuts.

1/4 cup Chopped Onion.

1/4 cup Chopped Tomato.

1/4 cup Chopped Green Capsicum.

Rock salt to taste

Pepper powder to taste.

5 flakes Garlic chopped.

2 tsp Olive oil.

1/2 tsp Lime jiuce.

Method:

Clean and soak Chick pea and Peanuts for 8 hours.

Pressure cook in cooker till 5 whistles.

After the pressure of the cooker is released,drain and let cool.

In a big bowl mix all the above ingredients,stir well.

Serve immediately or chill and serve.

Tip:You can also add chopped cucumber,lettuce,mint leaves,boiled corns or crumbled panner to this. to this
