Hot & Sour Vegetable Corn Soup

Sweet corn soup is my personal favorite,especially in monsoon.

This recipe is little different from regular sweet corn soup,is little more spicy and flavorful…a must try…

Here goes the recipe.

Ingredients:

2 tsp Oil.

1 ½ tsp Garlic, chopped.

1 ½ tsp Ginger, chopped.

1 tsp Green chillies, chopped.

¼ cup French beans, chopped.

¼ cup Carrots, diced.

¼ cup Corn, boiled.

1 tsp Green chilli sauce.

¾ cup Corn puree.

2 cups Vegetable stock.

Salt to taste.

1 tsp Sugar.

2 tbsp Corn four slurry (Corn flour+ water)

½ tsp Vinegar.

¼ cup Spring onions, chopped.

Method:

Heat oil in a pan and add in garlic, ginger and green chillies.

Let it fry for a minute,add in the French beans, carrots and boiled corn.

Saute them for 2 minutes and add in green chilli sauce and mix.

Add in the corn puree and mix everything.


Pour in the vegetable stock and mix well.
Season the soup with salt and sugar. Cover with a lid and let this come to a boil.


Later reduce the flame and let it simmer for 10 minutes. Remove the lid and pour in the prepared corn flour slurry. Stir immediately, otherwise you will end up with a lumpy soup.
Once the soup thickens add in the vinegar and mix. Cook for further 2-3 minutes and then turn off the flame.
Garnish the soup with spring onions and serve hot.

Broccoli & Almond Soup.

 

Mild winters have started here in Mumbai ,and what better time than this to make hot pipping soup.So today iI have made very simple creamy silky Broccoli soup.

Broccoli belongs to cabbage family,it has long flowering heads and is a very rich source of vitamin C & K.it resembles cauliflower . Mostly Broccoli is steamed or lightly sauted before adding to dishes.

Ingredients :

1 cup Broccoli florets.

1 small Onion  chopped.

6 pods of Garlic.

1 tspn Olive oil.

1/4 tspn Black pepper powder .

Salt to taste.

1/2 cup fresh Coconut Milk.

1 tbsp roasted Almond slices.

Method :

Heat oil in a pan .

Add crushed garlic and saute till it turns light brown . Add onions and sauté till they turn translucent.

Add broccoli florets , salt and pepper.saute for a min add half cup of water,cover and cook for 5 mins.

Switch of the gas and let it cool completely .

Pass it through mixie to make a puree.

Strain the pure and heat it till one boil adjust the seasoning.

Add coconut milk and mix well.

Serve immediately .

Tomato Soup

This is a recipe of authentic tomato soup followed in hotels.usually I mix all the ingredients together, cook for 3 whistles and purée. ….soup ready.

Ingredients

1 tbsp Butter

6 big Tomatoes

1 big Onion, chopped roughly

1/2 tsp Garlic, Chopped roughly

 1 tbsp cornflour dissolved in 1 tbsp water.

1/4 cup Cream

1 tbsp Sugar

1/2 tsp Salt

1/2 tsp Red chilli powder

Black pepper  to taste

Water – 1 + 2 cups

Method

Boil 3 cups of water in the deep sauce pan. When boiling, drop washed whole tomatoes in the boiling water. Cover with lid. Switch off the gas stove. Let it sit for 2-3 minutes.Drain the water out. Take them out in a plate and peel the skin off the tomatoes. Discard the peels.

Chop the blanched and peeled tomatoes roughly.Keep aside.

In a pan heat butter,add garlic and sauté for 4-5 seconds on low heat, till slightly pinkish. Add onions to the pan now. Sauté for 3-4 minutes on medium flame, till they are soft.

Add chopped tomatoes to the pan,Add 1 cup of water. Cover the lid and cook on medium flame for 7-8 minutes or till tomatoes are soft and cooked.

Now switch of the gas and add 2 cups of cold water.let it stand for 10 minutes. Once cooled blend this mixture in a  mixie to form soft purée.Now strain the purée through a sieve .

Put the puree in a pan back on medium fire. Add dissolved Cornflour, salt, red chilli powder,black pepper and sugar to it. Stir it well. Bring it to a boil and then simmer and cook for 3-5 minutes more. Stir 1/4 cup of cream and stir.

Cook on medium lower flame for 2 more minutes.Remove in serving bowls, garnish with crutons and serve hot.

Sweet Corn Vegetable Soup

Sweet corn is one of the most popular chinese soups. A must try for everyone who loves sweet corn. It is mildly spiced soup, easy to make and does not require too many ingredients. 

 

Ingredients:

 

1 Tin Sweet corn (Cream style).

 

1 Tin(measured with the same tin) Vegetable stock or plain water.

 

2 tbsp Cornflour mixed with 1/4 cup water.

 

1/4 cup chopped and boiled mixed vegetables.(Carrots,beans,corn).

 

1/2 tsp Vinegar.

 

Salt to taste.

 

Method:

In a thick bottom pan,add 1 tin of sweet corn and same amount of vegetable stock or water.

 

Mix well and let it come to boil.

 

Once it starts boiling add vegetables and salt.

 

Cook for 5 minutes,add cornflour dissolved in water,mix well and cook for another 2 minutes or till soup thickens .

 

Add vinegar and mix well.

Roasted Carrots Soup.

 

I am a big fan of soups,I can make soup out of anything and survive on it.Today made seasons first Gajar Halwa,so remaining parts of carrots were used to make this amazing soup.

Same recipe can be made without roasting the carrots..taste equally good.

Ingredients:

1 cup cleaned,peeled & roughly chopped Carrots.

1 Potato cleaned,peeled & roughly chopped potatoes.

1 Onion peeled and roughly chopped.

6 cloves Garlic chopped.

1 tbsp Olive oil/ghee/Butter.

1/2 tspn Pepper Powder(Black/ White).

1/2 tspn Red Chilli Powder.

Salt to taste.

Method:

Spread carrots,onion,potatoes and garlic on a baking tray,brush with butter or olive oil,bake on 180° for 10 minutes.Remove and let it cool.

Once cool,pass through mixie to form a puree.

Remove in a thick bottom pan and place on gas,add salt,pepper and chilli powder,adjust the consistency as per your taste.

Mix well,let it boil for 2 minutes.

Remove in a soup bowl, sprinkle some pepper powder and grated cheese,garnish with basil.

Serve hot.

Grilled Tomato & Carrot soup

This is very easy to make quick soup made in microwave.

Ingredients:

4 Tomatoes sliced.

2 Carrots sliced.

6 cloves of Garlic.

Salt to taste.

1 tbsp Olive oil.

1/4 tsp Pepper powder.

1/2 tsp Sugar.

Method:

In a non stick oven safe tray.

Arrange tomatoes,carrots and  garlic,add olive oil.

Bake for 20 minutes at 240 degree C in oven.

Remove and let cool.

Blend in a mixie to form puree,add water if required.

Add salt and pepper powder.Heat in a microwave just before serving.

Serve hot.

Minestrone Soup

Ingredients:

1 & 1/2 cup finely chopped Carrots.

2 tbsp finely chopped Cauli flower.

2 tbsp Green Peas.

1/4 cup finely chopped Potatoes.

3 tbsp finely chopped Cabbage.

2 tbsp Macroni.

1 tbsp Oil.

2 tbsp chopped Onion.

2 Tej Patta ( Bay leaves).

2 tbsp Corn flour dissolved in 1/2 cup water.

2 tbsp chopped Tomatoes.

4 tbsp Tomato puree/ketchup.

1 tsp Oregano.

Salt to taste.

Black pepper powder to taste.

Method:

Combine all vegetables except onion,tomatoes and peas in a food prossessor bowl and chop finely.

Heat oil in a deep bottom pan,add tej patta and onions.

Saute for two minutes.

Add chopped vegetables.Add 3 cups of water,boil for 5 minutes.

Add tomatoes,peas and macroni(I have used shell shaped macoroni).

Let it boil for 3 to 4 minutes more.

Add salt,pepper powder,oregano and tomato puree/ketchup.

Let it boil for some time.

Add cornflour dissolved in water.

Mix well.

Serve hot,with Garlic bread.
