Chocolate Pancake

I gifted myself with a book…aah! Chocolate by Chef Sanjeev Kapoor.

This is the first receipe that I tried from it…

Now Shounak wants this everyday for breakfast…

Ingredients:

1/4 cup Cocoa powder.

1/2 cup Chocolate chips.

3/4 cup Maida ( Refined flour).

11,2 tsp Baking powder.

1/4 tsp Salt.

1 Egg.

2 tbsp Caster sugar( powdered sugar)

1 cup Milk

2 tbsp melted Butter

Butter for greasing.

Chocolate sauce to serve.

Method:

Sift the flour,baking powder ,salt & cocoa powder together,keep aside.

In a big bowl break egg,add sugar,milk and melted butter,whisk well.

Add the flour mixture into the egg mixture and mix well till batter becomes smooth.

Mix in chocolate chips.

Heat a nonstick pan and grease it with a little butter,pour a ladleful of the batter and spread it thinly .

Cook,turning sides till golden brown on both sides.

Remove in a plate,spread some butter and drizzle with chocolate sauce.

Repeat the same to make remaining pancakes.

Serve immediately.

Tip:Same recipe can be used for dessert ,top it up with vanilla ice cream or whipped cream.

Multi Grain & Oats Pudla.

Pudlas are easy to make pancakes made from Besan,spices and vegetables,here is a dish in which I have made some changes to make it little more healthy.

Ingredients:

2 Cups Multigrain Aata.(Easily available in market,I used Pilsbury Multigrain Aata)

1/2 cup Oats(mildly roasted).

1 tsp Chilli powder.

1/2 tsp Dhana-Jeera powder.

1/2 tsp Turmeric powder.

Salt to taste.

2 tbsp chopped Corriander leaves.

2 pinch Fruit salt.

Oil for smearing.

Method:

In a bowl mix together all the ingredients except oil and fruit salt.

Add water as required,consistency should be like dosa batter.

Keep aside for 10 minutes.

Heat a griddle and smear some oil on it.

Add fruit salt to the batter and mix well.

Make small pancakes out of this batter.

Cover and cook till crisp,flip around and cook on other side.

Finish the remaining batter the same way.

Seve hot with chutney or sauce.

Aloo Paratha

Ingredients:

For the dough:

1 cup Wheat Flour.

1 cup Maida.

Salt to taste.

1 tsp Ajwain.

1 tsp Oil.

Dry flour for rolling.

For the stuffing :

3 medium sized Potatoes (Boiled,deskinned and mashed.)

1 tbsp chopped Corriander leaves.

1 tsp Chilli powder.

1/4 tsp Turmeric powder.

Salt to taste.

Ghee for smearing.

Method:

In a big bowl mix together wheat flour, maida ,salt and ajwain. Mix with three-fourth cup of water gradually and knead to make a smooth dough. Cover with a damp cloth and keep aside for fifteen minutes.

Mash the potatoes. Mix potatoes, red chilli powder, turmeric powder, salt and chopped corriander

Divide dough into eight equal portions and make pedas.

Cover with a wet cloth and keep aside for five minutes. Take a peda and flatten it by pressing.Roll out to form a roti.

Place potato mixture on it and again make it into a peda.

Seal the edges completely so that potato stuffing does not come out. Flatten these pedas, sprinkle a little flour and roll them with a rolling pin to approximately six-inch diameter. This is now called a parantha.

Heat a tawa, place parantha on it and cook on moderate heat for three minutes. Turn it and pour half a tablespoon of  ghee, spread it on parantha and shallow fry over low heat.

Turn it and again pour half a tablespoon of ghee on it.

Cook on low heat till golden brown. Serve hot with fresh yogurt or mango pickle.

Multigrain Onion & Cheese Paratha

Ingredients:

1 cup Multi grain Aata.

1/2 cup finely chopped Onion

1/2 cup grated Cheese.

1/2 tsp pepper powder.

1 tbsp oil.

Salt to taste.

Water to knead the dough.

Ghee for smearing.

Method:

Heat oil in a pan,add chopped  onions and saute till they turn light brown.

Add black pepper powder and salt.Mix well and keep aside to cool.

In a bowl mix together onion,flour,grated cheese and salt.Knead well adding water as required.

Divide into lemon size balls and roll out to form a roti.

Roast on a griddle on medium heat from both sides,smearing some ghee.

Spread some grated cheese on top. (Optional)

Serve hot with tomato ketchup.

Gul-Chun Ghalun Ghavane(Rice pancake with coconut and jaggery filling)

It is said that Ganpati Bappa likes sweets made from Rice floor,jaggery and coconut,hence modaks are his favourite,but when you dont have much time to spare,this dish is made as offering to Bappa,made from same ingredients as modaks but less time consuming….tasty and yummy…

Ingredients: 

2 cups Raw rice.(any variant)

1/2 cup Rice flour.(Optional)

1 tsp Salt.

Oil.

For Filling:

1 cup grated Coconut.

3/4 cup chopped Jaggery.

1 tsp Ghee.

1 tsp Cardamom powder.

1 tbsp Cashewnut pieces.

1 tsp Khus Khus (Poppy seeds)

pinch of Salt.

Method: 

Wash and soak rice in 4 to 5 cups of water for 8 hours.

Heat a pan,add ghee,coconut and jaggery,cook till jaggery melts and mixes well with coconut,add cahewnut pieces and khus khus.Cook stirring in between till water completely evaporates and mixture becomes dry.Switch off the gas and add cardamom powder,mix well.Remove in a bowl and keep for cooling.

Grind the saoked rice into fine paste.Add rice flour,salt and water to adjust the consistency.Consistency should be like that of buttermilk.As per my mother in law, adding of rice flour helps in making crisp ghavans,but my mom makes it just with rice paste.

Usually a special griddle called Bhide is used to make these,but same can be made in non stick pan also.

Cut one onion into half and pierce a fork in it.Use this to grease the griddle with oil.Alternately a tissue paper dipped in oil or silicone brush can also be used.

Heat the griddle on high heat,stir and pour the batter spreading on the griddle.

Lower the heat and let it cook,now spread a spoon ful of Chun(coconut and jaggery mixture)on it till it leaves side and becomes crispy(No need to turn and cook on other side).Fold in half.

Again fold in half.

Remove on banana leaf or cotton cloth.

Repeat the process to make another ghavan.

If made in advance can be reheated in microwave just before serving.

Tip:Any variety of rice can be used to make ghavans,I make it with basmati,basmati tukda or brown rice.My mom uses ukde tandul (boiled rice).

Phulka (Indian Flat Bread)

Chapatis or phulkas is a staple food in many parts of India. These rotis get their name Phulkas because they swell up with steam while being cooked.

Ingredients:

1 cup Wheat flour.

1 tsp Oil.

Salt to taste.

Ghee for brushing.

Method:

Combine flour,oil and salt in a bowl and knead into a semi soft dough adding enough water.

Divide the dough into 12 equal portions.

Roll out a thin roti using dry flour.

Put phulka on the hot tava. Cook until  small bubbles start to form. Flip and cook the other side for about 30 seconds until small bubbles form.

Take the phulka off the tava and turn the heat to medium, and put the phulka directly on the flame. It should balloon into a spherical shape and puff up.

Remove from fire and brush with ghee.

Serve hot with sabji of your choice

Mango & Choclate Chip Muffins

These yummy muffins are a must in my house during mango seasoon.The fabulous combination of two favourite treats-Mangoes and Choclate!I am sure all kids will love this…..

This recipe is an adaption of a recipe from Tarla Dalal.

Ingredients:

1 cup Maida.

1 tsp Baking powder.

A pinch of Baking Soda.

8 tbsp Condensed milk.

4 tbsp Powdered Sugar.

4 tbsp Mango pulp.

4 tbsp Melted butter.

5 drops of  Vanilla/mango essence.

5 tsp Choclate chips.

1 tsp Melted butter for greasing.

Method:

Sieve the flour, baking powder & baking soda in a bowl.Keep aside.

In another bowl ,combine the condensed milk,mango pulp,butter,powdered sugar and essence.Mix well and keep aside.

Line the muffin moulds with paper cups,grease them with melted butter.

Add the flour mixture and mix gently,using wooden spoon.

Add enough water(around 2 tbsp) to get a batter of dropping consistency.

Pour 1 tbsp of the mixture in each of the greased cup.

Evenly sprinkle choclate chips over each muffin .

 

Bake in a pre heated oven at 200 degree C for 20 minutes.

Cool slightly and serve.

Tip-Insert a toothpick to check if muffins are baked properly,if toothpick comes out clean muffins are done.
