This North Indian style dish is a delicious recipe that goes very well with chapatis or parathas. The recipe is easy to prepare and is one of my favorite.
Ingredients:
2 cup Bhindi (okra), chopped into medium pieces
1 cup potatoes, peeled and cubed
1/4 cup chopped Tomatoes.
1/2 tsp Jeera.
1 tsp White Seasme seeds.
A big pinch of Asafoetida.
1 tsp Red Chilli powder
1/4 tsp Haldi powder
1/2 tbsp Dhania/Jeera powder
1/4 tsp Amchur Powder
Salt to taste
1 & 1/2 tbsp Oil
2 tbsp chopped Corriander leaves.
Method:
Heat oil in a pan, add Jeera,sesame seeds and asafoetida,dhania/jeera powder, red chilli powder,turmeric powder and 2 tbsp of water.
Saute for 10-12 seconds.Add cubbed potatoes and salt. Cover with lid and cook on medium flame for 5 minutes.
Add chopped bhindi and mix well,add amchur powder,stir fry on medium heat for 2 minutes.
Add chopped tomatoes,sprinkle little water and mix well. Cook with lid and cook till the aloo and Bhindi turn soft.
Add chopped coriander leaves,mix well.
Serve hot with phulkas.
